1 tbsp. Dijon mustard
1/4 tsp Worcestershire sauce
1 3/4 C soup stock (beef is preferable)
2 tbsp. corn starch for thickening
½ package of cream cheese
Fresh Pappardelle Pasta (Farmboy)
Step by Step
Prep your ingredients:
Flank – slice the flank steak into three sections along the grain about 2” in diameter. Thinly slice the meat against the grain into small slices. Leave aside to bring to room temperature.
Mushrooms – Rinse and pat dry
Onion - chop onions and set aside
Peppers – Slice in long strips
Bring to boil water for noodles and allow simmer, set aside on back burner. Pre heat frying pan for flank steak to med high heat. Once ready splash some oil in the pan and grill flank steak turning once. Salt and pepper and set aside.
Grill mushrooms about 7 minutes and set aside, salt and pepper.
Add salted onions to pan, caramelize. Add peppers and grill for a few minutes longer. Once ready push to mixture to the side of the pan and add tomato paste or Heinz 57 sauce, Dijon mustard and Worcestershire sauce.
Let this bubble then before add soup stock.
As mixture simmers take some of the broth from the pan and mix with the corn starch to make a thickening slurry for pan.
Let this thicken for a moment and add flank steak and mushrooms to the mixture. Stir and cut up cream cheese to bring about a nice thick and cheesy sauce as it melts
Boil fresh pasta for 3-4 mins in lightly salted water. Once drained mix into your prepared sauce or plate and top with Flank Steak mixture.
