►Ingredients for the Moroccan Chicken
1 large whole chicken
2 tbsp. ras el hanout spice
2 garlic cloves
3 tbsp. sunflower oil
►Ingredients for the Ras El Hanout Spice Mix
2 tsp. ground ginger
1 tsp. cumin
1 tsp. cinnamon
1 tsp. coriander
1/2 tsp. turmeric
1 tsp. black-pepper
1/2 tsp. ground cardamom
1 tsp ground cloves
1 and 1/2 tsp. salt
►Ingredients for the Couscous
3 tbsp. sunflower oil
1 tbsp. sultanas
10 - 12 prunes
1 cup couscous
1 and half cup water
1/2 tsp. black-pepper
1/2 tsp. salt
1 tsp. ras el hanout spice
12 - 15 olives, use good quality ones
2 tsp. tabasco

Grilled Moroccan spiced chicken with sauteed herb & preserved lemons salad.
Filmed in the Lindeman's Open Garden at Melbourne International Flower and Garden Show, Celebrity Chef Dominique Rizzo shows us how to cook one of her lighter recipes, while Wine Ambassador Simon Cant talks about Lindeman's Early Harvest and Sweet Seasons wine matches.
Ingredients
■4 chicken breast kiev, 200g each
Marinade
■2 garlic cloves
■Good pinch salt
■1 tsp ground coriander
■1 tsp ground cumin
■1 tsp paprika
■½ tsp
■¼ cup firmly packed basil leaves
■¼ cup firmly packed mint leaves
■¼ cup firmly packed parsley
■¼ cup oregano leaves
■½ tsp chilli flakes
■1/2 cup oil
■¼ cup lemon juice
Sautéed herb and preserved lemon salad
■4 cloves sliced garlic
■2 long red chillies deseeded and thinly sliced
■2 quarters of preserved lemon finely diced
■A good splash of olive oil
■2 handfuls of rocket
■2 handfuls of spinach
■1 handful of mint leaves
■1 handful of parsley leaves
■1 handful of coriander leaves
■Couple pinches of salt
■Freshly cracked black pepper
Method
1.Place all ingredients into a food processor or blender and blend until a thick paste.
2.Rub paste all over the breasts and allow to marinate for a few hours in the refrigerator -- over night is best.
3. BBQ, roast or grill until meat is done and serve with herb salad.
4.Other meats like lamb, pork or beef can also be used in this recipe and the spices and herbs are fantastic with fish.
5.Heat the olive oil in a large pan, toss in the garlic, chillies and preserved lemon and allow to cook for a few minutes.
6.Add in the herbs and the leaves and toss lightly just to wilt the leaves.
7. Season with salt and cracked pepper and serve alongside the Moroccan spiced chicken.
8.Serve this dish with rice, couscous or a yoghurt dressed potato salad.
