Cedar Planked Bison / Jalapeno PBJ Burger recipe
My official entry for Man Cave Meals Summer burger grilling contest.
Bison, parked on a few Nature's Choice Cedar Planks and served up with organic peanut butter and jalapeno jelly! This particular peanut butter is quite a bit less sweet than those national brands, thereby making it perfect, along with jalapeno jelly, for an explosion of tremendous flavor! Not excessively hot, and certainly not excessively sweet.
Due to the insane amount of noise that this neighborhood was generating during recording, I had to cut a lot of the scenes out of the finished video, including the preparation of the bison patties. Sorry 'bout that!

How to Make a Grilled Smoked Jalapeno, Blue Cheese and Bacon Burger
Perfect for a tailgate party or Super Sunday, treat your friends to a mouthwatering burger that stands so tall you'll have to make sure it doesn't block your view of the TV! Start off with smoked jalapenos, add grilled bacon, blue cheese crumbles, and grilled tomatoes, and you have yourself a burger for the ages!
Recipe //
4 Jalapenos
2 disposable, aluminum trays
a handful of mesquite wood
12 ounces of ground chuck beef 70/30
12 ounces of ground sirloin 70/30
Choice of rub and oil
2 beef steak tomatoes cut into 1 ½ to 2 inch slices
4 ounces blue cheese
8 slices of cooked bacon cut in half
½ cup arugula
4 burger buns
4 Tbsp Mayo
4 tsp Dijon mustard
Preheat grill to high heat
To smoke your jalapenos grab the two pans in one pan place the wood chips and set pan number one aside. Grab pan number two and make holes around the lip of this pan. Now place jalapenos inside. Place pan number two over pan number one and cover pans with foil. Place over direct high heat over the grill or side burner until you see a heavy smoke. Once you see a heavy smoke wait 3-5 minutes then uncover. Let jalapenos cool off, take the seeds off, and slice jalapeno. Set smoked jalapenos aside.
For your tomatoes coat with your favorite rub or just salt and pepper, coat lightly with oil, and place over high heat with the lid closed for at least 45 seconds to a minute on both sides. Remove from grill and set aside.
For your meat, mix both the chuck, sirloin, and emulsify with your hands as to combine the meat together well. Now make patties, coat with your favorite rub and lightly coat with oil. Place the patties over high heat, now turn the heat down to a medium heat, after about 3 minutes flip burger and leave on direct heat for another 3-4 minutes or until your burger is done to your desired temperature. Let meat rest for at least 5-8 minutes. While the meat is resting place the buns over direct heat until the bread is warm.
Now assemble your burger to assemble, place mayo and mustard on both sides of your bread. On the bottom bun place arugula, tomato, beef, jalapeno, bacon, and blue cheese.
