The one and only Thai Chicken Mac
Heute zeige ich Euch einen unfassbar leckeren und sehr aufwändigen Burger. Ein Rezept aus der Zeitschrift BEEF Nr. 7.
Den Thai Chicken Mac... ein perfekter unfassbar leckerer Hähnchenburger mit einer Ananas-Majonaise, einem Gurkensalat, selbst gebackenen Sesam Burger-Brötchen (Video seperat) und einem Hähnchenfleisch-Pattie... dass euch Hören und Sehen vergeht... absolut UNFASSBAR lecker!
Hier die Zutaten:
Für die Majonasie:
1 reife Babyananas (oder eine kleine Dose Ananas)
1 tl brauner Zucker
1 tl purple Curry von Ingo Holland
1 extrafrisches EI (noch frischer als meins im Video)
1 lt süßer Senf
100 ml Distelöl
ein Spitzer Limettensaft
Priese Salz
Gurken-Salat:
ein kleines Stück Salatgurke
1 rote Zwiebel
2 EL Apfelessig
1 EL brauner Zucker
Hähnchen Patties:
2 Scheiben Toastbrot endrandet und im mixer klein gemacht
1 Bund Koriander
5 Frühlingszwiebeln
Abrieb einer Biolimette
500 gr Hähnchenbrustfleisch
2 EL Hoisin Sauce
1 Ei,
Salz

1 cup soy sauce
1 cup coconut vinegar or any vinegar
2 tbsp. Oyster sauce
2 tbsp. Brown sugar
1 tbsp crushed Black pepper
1 tbsp. Ginger powder
1 tbsp Garlic powder
1 bulb Red onion
1 bulb Garlic
1 medium-size Ginger (grated)
2 stalks Lemongrass
10 pcs. Kalamansi or may use lemon

Hawaiian Salmon with Pineapple Sauce
HAWAIIAN SALMON RECIPE
YIELD: 2 Servings
INGREDIENTS
2 (4-6 oz) pieces of boneless, skinless fresh salmon
2-3 tbsp soy sauce
1/4 cup pineapple juice
1 tsp fresh minced ginger root
1 tbsp sliced green onion
1/2 cup all purpose flour
1 egg, beaten with 1 tbsp cool water
1 1/2 cups cornflakes
1/2 cup coconut
1/4 cup sliced almonds
Canola oil to cook with, about 2 tbsp
PROCEDURE
If you need to remove the skin from the salmon, I will attach a link to a previous video where I demonstrate how to do this. In the video, I did not marinate the fish, but I definitely recommend that you do. Combine the soy sauce, pineapple juice, ginger root and the green onion. Put the salmon in a pie pan or something similar and pour the mixture on top. Make sure that you coat it all over. Leave out for an hour.
Prepare your breading. Put the flour in a bowl, then the egg & water mix in another bowl. Finally, using a larger bowl, place the cornflakes, which are somewhat crushed, along with the coconut and almonds. Mix together.
Preheat your pan. Make sure that the pan is the correct size. Also, that it is not a thin pan where it will most certainly burn. Preheat over medium high heat for about 5 minutes. Then turn down to medium.
Remove the salmon from the marinade. Dredge each salmon filet in the flour, shaking off the excess. Then dip into the egg and finally into the cornflake mixture, pressing it on well with your hands. Make sure that you cover the entire fish. Place in the pre heated pan and brown on both sides.
PINEAPPLE SAUCE
1 small can of crushed pineapple
1 tbsp soy sauce
1 tsp fresh crushed ginger
1 tbsp brown sugar
1 tbsp rice wine vinegar
2-3 tbsp cornstarch, diluted with cold water
Place the above ingredients, except for the cornstarch mix, in a sauce pot and bring to a boil. Whisk in some of the cornstarch mixture, keeping the sauce simmering. Adjust the consistency to your liking. Thicken more with cornstarch, thin with pineapple juice.
