How To make Grilled Chicken Breast Sandwiches with Roaste
6 chicken breast halves
: without skin
boned & : skinned 5 TB olive oil
1 TB black pepper :
cracked
2 TB fresh thyme
2 red bell peppers
1/2 c mayonnaise
1/4 c Dijon mustard
1 ts Worcestershire sauce
1 ts red wine vinegar
1 ds salt
3 oz arugula leaves
3 red ripe tomatoes -- for
: slicing 12 sl multi-grain bread
STEP ONE: For the Chicken Rub the chicken breasts with 3 tablespoons of the olive oil, the black pepper, and thyme leaves. Cover and refrigerate a minimum of 6 hours, preferably overnight. Remove from refrigerator 1 hour before cooking.
STEP TWO: For the Peppers:
Preheat oven to 500 degrees and place 2 red bell peppers on the rack and roast. Turn the peppers occasionally until the skins are completely charred (20 to 30 minutes). Place the peppers in a paper bag and seal the top. This allows them to steam and aids in peeling. Remove the peppers from the bag and remove the skins with your fingers. Sometimes a little cold running water helps. Remove the cores and seeds and slice into 1/4-inch strips. Toss the peppers with 2 tablespoons olive oil and store in a glass container until ready to use. If a charcoal fire is available, you can roast the peppers directly on the coals. This can be very tricky, so you need to watch them constantly. As the peppers begin to char, turn them so they char evenly. Once you have an even char, proceed as in oven roasting. The charcoal roasting imparts a smoky flavor that enhances the sandwich. STEP THREE: For the Sauce Mix mayonnaise, Dijon mustard, Worcestershire sauce, red wine vinegar, and dash of salt together well and refrigerate in a glass container until ready to use. STEP FOUR: Assembling the Sandwiches:
The chicken, peppers, and mustard sauce can be prepared to this point a day in advance. When you are ready to serve the sandwiches, prepare a charcoal fire or preheat the broiler for the chicken and bread. Grill or broil the breasts 6 to 10 minutes per side, depending on the heat of your fire. As they are cooking, brush a little butter or olive oil on one side of 12 slices of the bread. When the breasts are cooked, transfer to a platter and allow to cool slightly, at which time you will need to either grill or broil the bread until slightly toasted. Spread a liberal amount of the mustard sauce on the oiled or buttered side of the bread slices so that the dry sides will be on the outside of the sandwich. Slice the breasts on a diagonal and place each sliced breast on a slice of toasted bread. Top with some of the roasted pepper strips, 2 slices of tomato, some of the arugula, and the top piece of bread. Cut and serve as you would with any sandwich. Serve immediately. Tasty Grilled Chicken Recipe | Grilled Chicken Recipe | How to Make Grilled chicken | Glazed Chicken Recipe | Chicken Tenders Recipe | Grilled Chicken Recipe Healthy | Honey Glazed Chicken Recipe
Ingredients:
- Chicken fillets - 4 nos. (weighing around 100 gms each)
- Salt- 1 tsp
- Crushed Pepper- 1.5 tsp
- Honey- 3 tsp
- Soy sauce - 1 tsp
- Butter - 2 dollops/ tsp
- Olive Oil- 3 tsp (preferable but can also use refined white oil)
- Crushed whole garlic with skin- 6 big pods
Preparation:
- Keep the chicken fillets in a mixing bowl.
- Sprinkle salt & crushed pepper evenly. Pour the olive oil over it & add the crushed garlic.
- Mix everything well to coat evenly. (Alternatively you can add garlic powder or finely chopped garlic too.)
- Set aside for around 30 mins.
- To prepare the honey-soy glaze, mix 1 tsp of soy sauce & 3 tsp of honey in a bowl. Mix well & keep aside for glaze to be used later.
- For boiling vegetables, take a saucepan & boil water. Once it comes to a boil, add salt, mix well & add all the vegetables. Boil the vegetables on high for around 5 mins. Should still be little crunchy.
- Strain & wash it with cold water to retain the color & stop the cooking.
Process:
- Take a grill pan & add a dollop (1 tsp) of butter. Spread it evenly.
- Once hot, add the chicken fillets one beside the other. Grill on high heat for around 3 mins.
- Turn them on the other side & continue to grill for 3 more mins. on the other side.
- Lower heat to medium & keep pressing the chicken pieces with the spatula for the chicken to cook & get the grill marks.
- Turn it on the other side & repeat.
- Check if the chicken is cooked.
- Now take a basting brush & brush the chicken pieces with the honey-soy glaze.Turn the fillets on the other side.
- Again brush the other side with the honey-soy glaze & turn it over. The color should be evenly browned.
- Grill both sides for 1 min each or less. Take care that the honey-soy glaze does not burn.
- Remove onto a plate.
- To sauté the vegetables, take another pan & add a dollop/tsp of butter. Spread it and once hot add the boiled vegetables. Sauté on high for 2 mins, sprinkle some salt & crushed pepper. Mix & sauté for 2 mins.
- Serve the grilled chicken with a side of the veggies.

Just to be clear, you don't have to only eat chicken and rice to be healthy and fit. I make this because I love it and it can cook while I work around the house. There will be some heavier, creamier dishes later!
If you're worried about salmonella from rinsing your chicken, just wash your sink. My reasoning is that I don't know what touched the chicken before it was packaged. Yes you can kill bacteria and germs with heat, but there can also be various chemical, debris, and others. Plus, we should regularly clean our sink anyway. If you don't want to rinse, you don't have to!

The Most Amazing Chicken Sandwich You'll Ever Make
Growing up I used to visit my local deli and I would always order the same thing, a chicken schnitzel sandwich. Today I wanted to re-create this very sandwich but 10x better.
Italian vinaigrette
1/3 cup + 1 tbsp red wine vinegar
3/4 cup olive oil
1/2 tsp Italian seasoning
1/2 tsp dried oregano
5 sprigs of fresh thyme
1 tsp Dijon mustard
1 tsp honey
1/2 tsp chili flakes
1 large or 2 small cloves of garlic
1 medium shallot small dice
Salt and pepper to taste
Breading Station for chicken:
1/3 cup all-purpose flour
1 tsp garlic powder
1 tbsp onion powder
pepper to taste
Chicken Schnitzel sandwich fixings:
garlic or regular mayo
avocado
