How To make Grilled Chicken Breast and Bean Salad
2 tb Well-seasoned mustard
- to 3 tablespoons 4 Chicken breast halves
- skinned and boned 1 pk Frozen black-eyed peas
- 10-ounce package 32 oz Canned beans combined
- kidney, garbanzos, white 1 Medium-large red onion
- finely chopped 2 Medium-large ripe tomatoes
- coarsely chopped 2 tb Fresh thyme, chopped
- to 3 tablespoons 2 tb Fresh oregano, chopped
- to 3 tablespoons 4 Sun-dried tomato halves
- in oil, finely chopped 3 tb Extra-virgin olive oil
3 tb Balsamic vinegar
Black pepper to taste - freshly ground Heat broiler or prepare outdoor grill. Spread mustard on one side of chicken breasts and broil or grill until they begin to brown. Turn and spread on additional mustard. Cook until done, then cut into narrow strips and place in serving bowl. Cook peas according to package directions, not more than 15 minutes. Drain. Drain liquid from canned beans and rinse thoroughly. Add to bowl with black-eyed peas, onion, fresh tomatoes, herbs and dried tomatoes. Beat oil and vinegar and mix with salad ingredients. Season with pepper and serve at room temperature. Makes 6 servings.

1/4 bell pepper
10 baby tomatoes
1 chicken breast
2 boiled eggs
150 g boiled green beans
Dill and parsley
Salt and pepper
3 tbsp mayonnaise

Here is tasty fresh salad recipe perfect for the summer. You can add any salad toppings you like and make it a fresh healthy meal. I also use an avocado cilantro ranch dressing that goes perfect with this salad. It makes a great big salad for two or 4 individual servings
INGREDIENTS
2 precooked chicken breasts
2 romaine hearts chopped
19 oz can of black beans (drained and rinsed)
2 ears of corn (or one can of sweet corn)
grape tomatoes (or chopped tomato of your choice)
red onion (optional)
2 avocados (sliced or chopped)
**I used my avocado in the salad dressing

Ingredients
450g chicken thighs without bones, remove skin and cut into strips
450g green beans, cut off the ends and cut into half,
1/2 bulb garlic, peel and chop
Oil for frying
Marinade for Chicken
1 Tbsp corn starch
1 Tbsp Shaoxing wine
1 Tbsp soya sauce
Seasoning Sauce
1 Tbsp sugar
1 Tsp salt
1/4 tsp pepper powder
1 tsp sesame oil
2 Tbsp soya sauce
2 Tbsp Shaoxing wine
1/4 C water
