How To make Grilled Tuna Cheddar & Onion Sandwiches
1 Onion,large,thinly sliced
1 Garlic clove,minced/pressed
1/2 c Chicken broth
2 cn Albacore tuna*
1/2 c Celery,minced
2 tb Mayonnaise
8 Dark rye bread slices
1/4 lb Cheddar cheese,sharp**
* - water-packed, drained ** - thinly sliced ====================================================================== === 1. In a 10-12" nonstick frying pan, combine onion, garlic, and half the
broth. Bring to a boil over high heat; stir often until liquid evaporates and browned bit stick in pan. 2. Add half the remaining broth; stir to scrape browned bits free, then
boil again until liquid evaporates and browned bits form. Repeat step with remaining broth, cooking until liquid evaporates. Set onion mixture aside. 3. In a bowl, mix together tuna, celery, and mayonnaise. Top 4 slices bread
equally with tuna mixture, onion mixture, cheese, and remaining bread. 4. Wipe the pan clean. Place over medium heat and add 2 sandwiches. (If you
have another nonstick frying pan, toast all the sandwiches at once.) Cook until sandwiches are toasted on the bottom, about 4 minutes. Turn over and toast tops, about 4 minutes more.

- 1 can (180g) drained tuna in water
- 1/2 Small sized red Onion
-1/4 Lemon or 1/2 tbsp Lemon juice
- 2 Tbsp Mayonnaise
- Salt and Pepper to taste
- 1 tsp Sugar (optional)
- Sourdough bread
- Butter
- Cheddar Cheese

Tuna Melt Recipe:
== Ingredients ==
- 1 can skipjack tuna, drained
- 14 cup organic celery, finely diced
- 2 or 3 green onion, diced
- Garlic salt
- Pinch of salt
- Squeeze of fresh lemon juice
- 1 Tbsp. fresh organic parsley, chopped
- Mayonnaise
- 2 slices cheddar cheese
- Butter from grass-fed cows
== Directions ==
Add the tuna, celery, onion, garlic powder, salt, lemon juice, and mayonnaise to a bowl and stir to combine well.
Place a good amount of tuna mix onto one slice of bread and add the cheese on top. Place the 2nd piece of bread on top. Add some softened butter to the outside of the bread and place it butter side down onto a cast iron grill pan.
Add more butter to the top piece of bread and cover with a lid or piece of foil. This will help the cheese melt.
Once golden brown, turn over the sandwich with a spatula and cook on the second side (covered) until the bread gets a nice golden brown and the cheese is melted.

Grilled Tuna with Caramelized Onions, Cinnamon and Mint

Ingredients
2 tablespoons extra-virgin olive oil
2 large onions, halved and thinly sliced
1 tablespoon sugar
2 cinnamon sticks
Pinch red pepper flakes
Kosher salt and freshly ground black pepper
1/4 cup red wine vinegar
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley, plus whole leaves for garnish
4 tuna steaks, 1 1/2-inches thick
2 tablespoon canola oil
Directions
Heat the olive oil over medium heat in a large saute pan. Add the onions, sugar, cinnamon and red pepper flakes and sprinkle with salt and pepper. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 30 minutes. Stir in a few tablespoons of water and the vinegar. Taste and season with salt and pepper. Stir in the mint and chopped parsley just before serving.
Heat the grill to high for direct grilling. Brush the tuna on both sides with the canola oil and sprinkle with salt and pepper. Grill the tuna until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 2 minutes each side.
Slice the tuna steaks thickly across the grain and shingle them on a serving platter. Spoon the onion mixture down the center. Keep at room temperature about 15 minutes before serving.
