How To make Green Beans with Walnuts & Tarragon
1 lb Beans
-(blue lakes, yellows, - haricot verts) 1 tb Walnut oil
1 tb Olive oil
1 Shallot; finely diced
1 ts Fresh tarragon, minced
4 New-crop walnuts; cracked
- and broken into quarters Salt and pepper Tarragon vinegar -=OR=- Champagne vinegar - (to taste) TIP STEM ENDS OF BEANS. Bring 4 quarts water to boil and add 1 1/2 tablespoons salt. Cook beans in 2 batches until tender but still a little firm, then lift out. Lay them on a kitchen towel to dry for a minute or so. Transfer to a bowl. Add oils, shallot, tarragon and walnut pieces. Toss and season to taste with salt and pepper. Add a little vinegar just before serving. Serve warm.

These roasted green beans are roasted with garlic and then tossed with cranberries and walnuts. The green beans are crisp and the garlic caramelized. You cannot go wrong with this side dish.

Serves four
1 pound trimmed green beans
4 large garlic cloves finely sliced
1 TBS olive oil
Salt & Pepper
¼ cup chopped walnuts
¼ cup dried cranberries
Heat your oven to 425 degrees F (225 C).
Place the green beans and the garlic in a roasting pan. Drizzle them with olive oil and season with salt and pepper. Toss the green beans around with your clean hands, making sure that they are coated evenly, and reorganize them in the pan in a single layer.
Place the green beans in the oven and roast for 15 minutes. Remove them from the oven and flip them around. Return the green beans to the oven and roast for an extra 10 minutes.
Transfer the green beans into a bowl and add the walnuts and cranberries. Toss everything and serve. Enjoy!

Green beans almondine is an easy side dish to make. It is also elegant and incredibly delicious. We are going to blanch our green beans and then finish them in a skillet with garlic and red onion. Green Bean Almondine
1 pound (454 grams) trimmed green beans
2 tablespoon unsalted butter
1/3 cup coarsely chopped almonds
2 tablespoons finely chopped purple onion
2 garlic cloves — minced
2 teaspoons lemon zest
2 teaspoons lemon juice
Salt & Pepper
Bring a large pot of water to a boil. Add salt and mix. Add the green beans. Get a large bowl of ice water ready.
Cook the green beans for about 4 minutes — until still crisp but soft in the middle.
Transfer the blanched green beans into the bowl of ice water.
Melt the butter in a skillet. Add the almonds and toast for about 2 minutes. Work on medium heat and stir the almonds often.
Add the onion and garlic. Cook for about one minute — until you can smell the garlic. Add the green beans and mix well. Cook for about two more minutes.
Add the lemon zest and lemon juice. Season with salt and pepper. Mix well and serve.
