Easy Green Beans Almondine is a Healthy and Fresh Side Dish
Sauteed green beans never tasted so good! This recipe is so easy to make, making it perfect for a beginner cook. Easy Green Beans Almondine is a great holiday side dish that goes with turkey, ham, roast beef and more!

Ingredients
▢1/4 cup butter, divided
▢1/2 cup sliced almonds
▢1/4 cup shallots minced
▢2 garlic cloves, minced
▢1 pound green beans, trimmed and washed
▢kosher salt and pepper to taste
▢juice and zest of one lemon
▢2 tablespoons chopped fresh parsley
Instructions
Bring a large pot of water to a boil over medium high heat.
Season the water, liberally, with kosher salt and then add the green beans.
Blanch the green beans for 3-4 minutes or until they are crisp tender. (They need to be slightly undercooked since they'll finish cooking in the skillet.)
Using a slotted spoon, transfer the green beans to an ice bath (a bowl of cold water with ice) to stop the cooking process. (You can do this step in advance and store in an airtight container for up to 24 hours in the refrigerator.)
Melt 1 tablespoon of butter in a skillet over medium heat.
Add the almonds to the pan and cook for 3-4 minutes or until golden brown, tossing occasionally to prevent burning.
Remove the almonds from the pan and wipe the pan clean with a paper towel.
Melt the remaining butter in the pan. Add the shallots and garlic. Cook for 2-3 minutes.
Add the green beans and toss with the shallots. Cook the green beans, stirring occasionally, for an additional 3-4 minutes.
Stir in the lemon juice, lemon zest, salt and pepper.
Sprinkle the almonds over the green beans and garnish with parsley.
Serve immediately.

Garlic Green Beans Almondine with Crispy Shallots
Green beans almondine is a classic French dish made with green beans and toasted almonds. They make a perfect side dish but are so good, they can also be served as a main.
The green beans are first blanched to soften them, then gently sauteed in butter and garlic.
The toasted almonds are added at the end for a crunchy contrast then topped with fried shallots for a hit of caramelised crisp.
This dish is simple but delicious, and it's a great way to showcase fresh green beans. This version has the addition of crispy shallots and lemon zest.

Ingredients
1 lb haricots vert, french green beans, stem ends trimmed
2 tbsp kosher salt, plus more for seasoning
3 tbsp butter
½ c sliced almonds
2 medium shallots, thinly sliced
2 cloves garlic, minced
1 tbsp lemon juice

Jacques Pépin shows us a tasty way to prepare string beans that is neither too little (blanching) or too much (mushy). As usual, you'll discover clever and time-saving techniques for peeling and chopping along the way. Boil the string beans in salted water for just about 6 minutes so they're still slightly crunchy. Sautee chopped shallot in butter with a splash of oil (Yes, you heard that right, both butter and oil. The oil will prevent the butter from burning). Make sure to cool your string beans before introducing them to the skillet. Sautee and serve.
