???? Better Than Mom's Meatloaf Recipe!
Meatloaf has a bit of a bad reputation - but if you cook it right; it can be juicy and full of flavour! It can also be a quick, easy, and affordable meal - discount ground meat and axe throwing… what could go wrong?

Ingredients:
170g (6 ounces) breadcrumbs
1/2 tsp (2 mL) ground black pepper
1/2 tsp (2 mL) pepper flakes
1 tsp (5 mL) chili powder
1 tsp (5 mL) dried thyme
1/2 onion, roughly chopped
Handful of mushrooms
3 cloves garlic
1 small bell pepper
1 lb (500g) ground beef
1 lb (500g) ground pork
3 ounces (90g) bacon
1 1/2 (7 ml) tsp coarse salt
1 egg
Homemade ketchup or BBQ sauce for glaze
Directions
Heat oven to 325º F (160ºC)
Mix breadcrumbs, black pepper, pepper flakes, chili powder, and thyme.
Place the onion, garlic, mushrooms, and red pepper, and bacon in a food processor.
Pulse until the mixture is finely minced, but not a paste.
Combine the bread crumb mixture, vegetable mixture, ground meat, egg and salt .
Mix thoroughly, without overmixing.
Mold mixture into a 10” x 4.5” x 3” loaf pan.
Turn the meatloaf out of the loaf pan onto a parchment lined baking tray.
After 30 minutes baste with ketchup or BBQ sauce.
Bake until internal temp reaches 160ºF or 71ºC - about 1 hour and 15 minutes.

Country Style Meatloaf Recipe
This easy to make meatloaf recipe is the ultimate comfort food made from few ingredients and that is guaranteed to bring smiles around your table.
Ingredients for this recipe:
For the Meatloaf:
• ¾ loaf Italian Bread, soaked in bread and squeezed
• 1 seeded medium-diced red bell pepper
• 1 seeded medium-diced green bell pepper
• 1 peeled small-diced yellow onion
• 4 finely minced cloves of garlic
• 3 ½ pounds 90/10 ground beef
• 4 large eggs
• 1 ½ tablespoons Worcestershire sauce
• sea salt and pepper to taste
For the Glaze:
• ¾ cup ketchup
• 1/3 cup packed light brown sugar
• 2 tablespoons soy sauce
Serves 12
Prep Time: 15 minutes
Cook Time: 60 minutes
Procedures:
1. Preheat the oven to 375°.
2. Add the squeezed out wet bread to a large bowl along with the peppers, onions, garlic, ground beef, eggs, Worcestershire sauce, salt and pepper and mix thoroughly until completely combined.
3. Divide the mixture between to 9x5 prepared loaf pans and pack it in tight. You can line one of the pans with bacon as I did in the video for extra flavor if you prefer.
4. In a small bowl mix together the ketchup, brown sugar, and soy sauce until combined and add it to the top of the meatloaf and spread around to coat the top.
5. Bake in the oven at 375° for 50-60 minutes or until cooked throughout and reads 165° internally.
6. Rest for 3-4 minutes, slice, and serve.
Chef Notes:
Make-Ahead: You can make this up to 1 hour ahead of time. Wrap in foil and keep warm in the oven at 200°.
How to Store: Place cooled and covered in plastic for up to 4 days in the refrigerator. It will freeze well covered for up to 3 months. Thaw for 1 day in the refrigerator before reheating.
How to Reheat: Place your desired amount of meatloaf into a pan or on a tray with 2 tablespoons of water and cover with foil and cook at 350° for 8-10 minutes or until hot. You can also heat in the microwave.
This recipe makes enough for 2 loaves and will feed 6 people per loaf.
In the meatloaf glaze, you can swap the brown sugar for regular sugar or honey.
Make sure to press the meatloaf into the loaf pans to compact it so that it does not fall apart when slicing after it is cooked.
Make sure the meatloaf reads 165° internally using a thermometer before removing it from the oven. It is ok if there’s a little pink in there, it’s like eating a medium to medium-well hamburger.

Good Eats Meatloaf

Ingredients
6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey
Directions
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.
