How To make Cajun Meat Loaf
SEASONING MIX:
2 ea Whole bay leaves
1 t Salt
1 t Ground cayenne pepper
1 t Black pepper
1/2 t White pepper
1/2 t Ground cumin
1/2 t Ground nutmeg
MAIN INGREDIENTS:
4 T Unsalted butter
3/4 c Finely chopped onions
1/2 c Green bell peppers, chopped
1/4 c Green onions, finely chopped
2 t Minced garlic
1 T Tabasco sauce
1 T Worcestershire sauce
1/2 c Evaporated milk
1/2 c Catsup
1 1/2 lb Ground beef
1/2 lb Ground pork
2 ea Eggs, lightly beaten
1 c Very fine bread crumbs
Combine the seasoning mix ingredients in a small bowl and set aside. Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, tabasco, Worcestershire and seasoning mix. Saute until mixture starts sticking excessively, about 6 minutes, stirring occasionally and scraping the pan bottom well. Stir in the milk and catsup. Continue cooking for about 2 minutes, stirring occasionally. Remove from heat and allow mixture to cool to room temperature. Place the ground beef and pork in an ungreased 13x9-inch baking pan. Add the eggs, the cooked vegetable mixture and the bread crumbs, remove the bay leaves. Mix by hand until thoroughly combined. In the center of the pan, shape the mixture into a loaf that is about 1-1/2 inches high, 6 inches wide and 12 inches long. Bake uncovered at 350F for 25 minutes, then raise heat to 400F and continue cooking until done, about 35 minutes longer. Serve immediately as is or with Very Hot Cajun Sauce for Beef. This is best using both ground pork and ground beef, as the pork gives more flavor diversity. However, you can make it with ground beef only. From Paul Prudhomme's "Louisiana Kitchen"

Cajun Meat Loaf
2 tbsp butter
1/2 large onion, chopped
1/2 cup green bell pepper, chopped
1 tsp salt
1/4 to 1/2 cayenne pepper
1/2 tsp dried thyme
1/2 tsp ground pepper
1/2 tsp ground cumin
1 lb lean ground beef
1 egg, beaten to blend
1/2 cup fine dry breadcrumbs
3/4 cup catsup, divided
1 tsp Worcestershire sauce, plus a couple of dashes
Preheat oven to 375 degrees. Melt butter in heavy medium skillet over medium-low heat. Add onion, green pepper, salt, cayenne pepper, thyme, ground pepper and cumin to butter and cook until vegetables are tender; stir frequently.
Combine meat, egg, breadcrumbs, 1/4 cup catsup and 1 tsp Worcestershire sauce in a medium bowl. Blend in sautéed vegetables. Form mixture into loaf pan; bake 20 minutes. While baking, mix remaining 1/2 cup catsup, 1/4 tsp or more cayenne pepper and 2 dashes of Worcestershire sauce together. After the 20 minutes are up, pour catsup mixture over meat loaf and bake for 40 more minutes. Let rest for 5 minutes.
Three-Cheese Potato Bake
2 2/3 cups chicken broth
2/3 cup milk
1/4 cup butter
1/4 tsp pepper
2 2/3 cups mashed potato flakes
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded cheddar cheese
1/3 cup cubed processed American cheese
2 tbsp snipped chives
1/4 cup sour cream, optional
Preheat oven to 350 degrees. In a large saucepan, combine the broth, milk, butter and pepper; bring to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds; fluff with a fork. Transfer to a greased 1 quart baking dish; top with cheeses.
Bake, uncovered for 20 minutes or until cheese is melted. Sprinkle with chives. Serve with sour cream if desired.

2 lbs of ground beef 85% or 90%
1 Tbsp of Olive Oil
1 Onion, finely diced
2 tbsp Garlic, minced
4 Slices of Cuban bread, or Italian
½ cup of Milk
¼ cup of Chopped Parsley
2 Eggs
1 tbsp Worcesteshire Sauce
1 tbsp creole seasoning
Salt and Pepper, to taste
For the Glaze:
3/4 cup of Ketchup
2 Tbsp of Tomato sauce
¼ cup of Brown Sugar
1 tsp of Dijon Mustard
1 tsp of Paprika
1 tbsp of Granulated Onion
