How To make Golden Pumpkin Bread
16 ounces canned pumpkin
1 1/2 cups granulated sugar
1 cup firmly packed brown sugar
4 eggs
1/2 cup vegetable oil
3 1/2 cups flour
1 cup enriched corn meal
2 teaspoons baking soda
2 teaspoons salt
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1 cup sour cream
1/2 cup water
3/4 cup raisins
1/2 cup chopped pecans
Beat together pumpkin, sugars, eggs and oil. Combine dry ingredients and add t o pumpkin mixture; alternating with sour cream and water, mixing well after eac h addition. Stir in raisins and pecans. Pour into two well greased 9 x 5 loaf pans. Bake in preheated 350 oven about 1 hour and 10 minutes. Cool 10 minutes and remove from pans. If using small loaf pans bake 40 to 45 m inutes

BETH'S EASY PUMPKIN BREAD RECIPE
Makes 2 9x5 loaves
PRINT RECIPE HERE:
Ingredients:
3 ½ cups (420 g) of flour
1 ½ cups (300 g) of sugar
1 ½ tsp (7.5 ml) salt
2 teaspoons (10 ml) baking soda
3 tsp (45 g) of pumpkin pie spice (or 2 tsp cinnamon, 3/4 tsp nutmeg, 1/8 tsp cloves, 1/8 tsp ground ginger))
1 15-oz can (424 g) of pure pumpkin puree (about 1 3/4 cup)
5 eggs
1 cup (240 ml) of canola oil
1/2 cup (120 ml) of water
Optional
1 cup (240 ml) of raisins
1 cup (240 ml) of walnuts
1 cup (240 ml) of Pepitas (Toasted Pumpkin Seeds)
Method:
Preheat oven to 350F (176C) degrees.
Grease two 9 x 5 (23 cm x 13 cm) loaf pans.
Mix dry ingredients. Mix wet ingredients. Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!)
Add raisins.
Pour batter into two loaf pans. Top one with walnuts and top the other with Pepitas.
Bake until a toothpick comes out clean, about 40-50 mins.

⭐️ INGREDIENTS
Wet Ingredients
1 can (15 ounces) 100% pure pumpkin puree
¾ cup sugar you can go as low as ½ cup
⅓ cup almond milk or another plant milk
¼ cup olive oil sub another neutral oil or apple sauce
Spices
2 teaspoons cinnamon you can sub all the spices with 2 teaspoons of pumpkin spice mix
½ teaspoon clove
¼ teaspoon nutmeg
¼ teaspoon allspice
1 teaspoon ginger powder or fresh grated
Dry Ingredients
2 cups all-purpose flour or half all-purpose and half whole-wheat
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
BAKE at 350°F or 180°C for 50 to 60 minutes

Sourdough Pumpkin Bread, you must try this easy recipe, no water added
This golden pumpkin bread is made of pure pumpkin puree. No water, no sugar, no oil, it is a very healthy staple bread.
Ingredients:
300g bread flour
100g active sourdough starter
6g salt
250g pumpkin puree (adjust based on its moisture content)
50g pumpkin seeds
*** Pumpkin puree:
mashed steamed pumpkin , same as in this video
Preheat the oven and cast iron pot to 230C/445F in advance
Cover the cast iron pot, bake at 230C/445F for 30 minutes
Remove the lid, turn to 200C/390F, and bake for another 15 minutes
