How To make Glazed Coffee Cake
1/2 c Post Grape Nuts
1/2 c Sugar
2 ts Maxwell House instant coffee
2 ts Cinnamon
1 3/4 c Flour
1 c Flour
1 ts Baking soda
1/2 ts Calumet baking powder
1/2 ts Salt
1 c Sour cream
1/2 c Butter, softened
2 Eggs
1/2 ts Vanilla
Mix cereal with 1/2 cup sugar, the instant coffee and cinnamon; set aside. Mix flour with 1 cup sugar, the baking soda, baking powder and salt in large mixer bowl. Add sour cream, butter, eggs and vanilla. Blend at low speed with electric mixer, then beat for 1 minute at medium speed. Spread one third of the batter in a greased 8 inch square pan; sprinkle with half of the cereal mixture. Repeat layers and top with remaining batter. Bake at 350 degrees for 45 to 50 minutes, or until tooth pick inserted into the center comes out clean. Cool in pan; spread with coffee glaze. Coffee glaze: Gradually blend 2 tb cooled brewed Maxwell House coffee into 1 1/2 cups sifted confectioners sugar. Makes enough to glaze the top of an 8 or 9 inch square cake or 10 inch tube cake.

Wet ingredients
400g white sugar
2 eggs
180g sour cream
80g milk
2 tsp vanilla extract
1 pinch @cornishsea_salt
100g vegetable oil

Dry ingredients
250g plain flour
90g cocoa powder
1 tsp baking powder

200ml black coffee (or hot water )
Add all the wet ingredients together and then whisk until smooth
Then sieve all dry ingredients together in a separate bowl and then fold into the wet ingredients
Add the hot coffee to the mixture and stir.
Cook at 180c for 1 hour
Buffalo trace glaze
125g sugar
100ml buffalo trace
100g butter
Simmer until sugar dissolves and then brush liberally over your cake while you have allowed to cool

Tips for the BEST honeybun cake
1. Don't swirl the middle layer. Just sprinkle that cinnamon sugar on there and then top with the batter. I swear it seems to come out so perfectly gooey that way.
2. Add the glaze while the cake is hot. It's important that you spread the glaze while the cake is still hot. This will give it that thin, sticky, lightly glazed appearance.
3. Let the cake rest. It's tempting to dig right in but don't! The cinnamon sugar layer needs to firm up a bit and so does the glaze. 20 minutes usually does it and the cake will still be deliciously hot.
4. Chill before cutting. This is a rich and gooey cake! To make cutting the cake into bars easier, I like to chill it a bit in the fridge or freezer just until the bottom of the pan is cool. This allows everything to set up perfectly and creates a cleaner cut.

This chocolate chip banana bread coffee cake is soft, gooey, and so delicious. It’s gluten free, dairy free, and refined sugar free!
Coffee Cake:
•2 cups oat flour
•3/4 cup coconut sugar
•1/2 cup almond flour
•1 tsp baking powder
•1 tsp baking soda
•1 tsp cinnamon
•1/2 tsp salt
•2 eggs
•1/3 cup oil (olive, avocado or coconut oil, melted)
•1 1/4 cups mashed banana
•3/4 cup dark chocolate chips (I use dairy free & refined sugar free)
Streusel:
•3/4 cup oat flour
•3/4 cup coconut sugar
•1/3 cup coconut oil, melted (or dairy free butter, melted)
•1 tsp cinnamon
•1/4 cup dark chocolate chocolate chips. (I use dairy free and refined sugar free)
Glaze:
•1 tbsp coconut butter
•1-3 tsp water
•1 -2 tsp pure maple syrup
Instructions:
1. Preheat the oven to 350°F and line an 8-inch round cake pan with parchment paper.
2. Prepare the coffee cake: whisk together the eggs in a large bowl then add in the remaining wet ingredients and mix. Next add in all of the dry ingredients and mix until smooth. Set aside.
3. While the batter rests, prepare the streusel: add all of the streusel ingredients (except for the chocolate chips) to a bowl and mix.
4. Add half of the coffee cake batter to the bottom of the lined pan and smooth it out. Top with half of the streusel and half of the chocolate chips. Repeat with the remaining batter, streusel, and chocolate chips.
5. Place in the oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool.
6. While it cools, prepare the glaze: heat 1 tbsp coconut butter in the microwave or on the stovetop until warm/runny. Remove from the heat and stir in 1 tsp water and 1 tsp pure maple syrup. Mix until smooth, adding more water and maple syrup as needed
7. Once the coffee cake has cooled, remove from the pan and drizzle with the glaze then serve!
