How To make Chocolate Glazed Banana Cake

BANANA CAKE:
1 ts Vegetable shortening
3 c Sifted cake flour
1 tb Baking powder
1 1/4 c Granulated sugar
3 Eggs
1/3 c + 1 tb butter softened
1 1/2 c Mashed ripe bananas
1/3 c Buttermilk
CHOCOLATE GLAZE:
1 c Unsifted powdered sugar
1/4 c Unsweetened cocoa
1 1/2 oz Unsweetened chocolate
1/4 c Boiling water
To make Banana Cake: Preheat oven to 350 degrees. Lightly grease two 9-inch cake pans or one 13-by-9-by-2-inch baking pan with shortening. Then flour and set aside. Sift flour with baking powder; set aside. In mixer bowl, beat sugar with eggs and butter on medium speed 5 minutes, scraping bowl down several times. Reduce speed to low, beat in bananas and buttermilk. Add dry ingredients all at once, mixing only moisten dry ingredients. Spoon batter into pans and bake on middle shelf of oven 25 to 30 minutes, or until wooden pick inserted in center comes out clean.
Cool 5 minutes in pans, then turn onto rack to finish cooling. For best results, wrap cooled layers in film and ripen overnight before serving. Either serve plain or with Chocolate Glaze. To make Chocolate Glaze: Sift sugar with cocoa, set aside. Melt chocolate in top of double boiler over simmering water, or in microwave oven on high for 1 minute. Off heat, stir boiling water into melted chocolate to make a smooth paste, then stir in sugar-cocoa mixture. Spread evenly while warm over Banana Cake layers. Variation: To make Banana Nut Cake, fold in 1/2 cup chopped pecans or walnuts with flour. Per serving (based on 12 servings with glaze): 346 calories, 5 grams protein, 62 grams carbohydrate, 10 grams fat, 70 milligrams cholesterol, 166 milligrams sodium.

Ingredients
All purpose flour- 1 cup (120g)
Cocoa powder - 1/3 cup (35g)
Baking powder- 1 teaspoon
Baking soda - 1/2 teaspoon
Salt - 1/4 teaspoon
Eggs - 2
Ripe bananas - 2 large
Sugar - 1 cup (200g)
Vanilla - 1 teaspoon
Oil - 1/2 cup (125ml)
Milk - 2 tablespoons
Chocolate chips - 3 tablespoons
Bake in preheated oven at 180•c for 45 to 50 minutes .

(A) Sieved (twice)
• 80g bread flour
• 20g cocoa powder
• 1/2 tsp instant coffee (option)
(B) Mixed
• 4 egg yolks, large (66g)
• 1 1/2 tsp Vanilla extract
• 50ml milk
• 40ml vegetable oil / olive oil
• 50g sugar
• a pinch of salt
**Poured (A) to (B) and mixed
(C) Whipped
• 4 egg whites, large
• 1/4 tsp cream of tartar
• 1 tsp lemon juice

[2 min Speed 3 Temp 50°C]
(F) 4 Banana

Decoration:
++++++++
1. Place bottom half of the cake on the cake base board
2. Cover one layer chocolate fresh cream (D)
3. Put the bananas on-top of the creme layer
4. Cover one more layer chocolate fresh cream (D)
5. Put another half of the cake onto of the cream layer
6. Cover the whole cake with chocolate fresh cream (D)
7. Poured the warm chocolate ganache on to the centre of the cake and letting it run down the sides and chilled in refrigerate for 3 hours.
8. Transfer the cake to a plate for serving. Any leftover cake can be covered and kept in the fridge for 2 days.
Tips:
1) use cold fresh eggs.
2) Whipped: Place egg whites in a clean, dry mixing jar, completely free from any grease, oil or water. Beating egg whites is a very important process, It will help your cakes rise with perfectly. Do not under or over beat the egg whites. As soon as the white have reached to stiff peak stage and fold them into your batter and bake immediately.
3) Fold the egg whites into the batter. cut a path down and don't stir and never use an electric mixer for this.
4) Do not bake the cake quickly at a high temperature and don't remove hot cake out of a baking pan. otherwise the cake could deflated, shrinks or crack on top.
5) Please understand that everyone's oven work differently. You should also check the temperature of your oven. if not, your cake won't rise well
