How To make Garbanzo Guacamole
1 cn Garbanzo beans; rinse/drain
1 tb Lemon juice; fresh
1 Cl Garlic; crushed
1 md Onion; chopped
1/2 sm Avocado*; peeled/chopped
1 md Tomato; chopped
4 Scallions; thinly sliced
1 tb Green chiles; canned, choppe
Recipe by: The New McDougall Cookbook Preparation Time: 0:15 Place the garbanzo beans in a food processor or blender. Add the lemon juice and garlic. Process briefly, until the garbanzos are slightly chopped. Add the onion and the avocado, if desired. Process again until the mixture is chunky. Place the mixture in a bowl and add the remaining ingredients. Mix well. Cover and chill before serving. 205 calories, 3.2 grams fat per 1/2 cup serving. This is a lower-fat version of the traditional guacamole. Because of the small amount of avocado used, however, it still contains some fat. To reduce the amount of fat, eliminate the avocado. Guacamole Chickpea Sandwich | गुआकमोल चिकपी सॅन्डविच | Sandwich Recipes | Sanjeev Kapoor Khazana
Ever heard of chickpeas as a spread and that has a drizzle of extra virgin olive oil? With avocado, mayo and seasoning of course. A delightful fusion sandwich.
GUACAMOLE CHICKPEA SANDWICH
Ingredients
½ avocado
1 cup boiled chickpeas
8 toasted sourdough bread slices
2-3 tbsps mayonnaise
Salt to taste
Black pepper powder to taste
2 green chillies, chopped
½ tsp red chilli flakes
2 tbsps chopped fresh parsley
1 small onion, chopped
1 small tomato, chopped
1 tbsp lemon juice
2-3 tbsps extra virgin olive oil + to drizzle
¼ cup grated carrot
English cucumber slices as required
Quartered cherry tomatoes as required
Micro greens as required
Method
1. Transfer the chickpeas in a food processor jar. Deseed avocado, remove pulp and add to the food processor jar. Add mayonnaise and process to a coarse paste.
2. Transfer in a bowl. Add salt, black pepper powder, green chillies, red chilli flakes, parsley, onion, tomato, lemon juice, extra virgin olive oil, carrot and mix well.
3. Spread the prepared chickpea mixture evenly on the toasted bread slices.
4. Arrange cucumber slices, cherry tomatoes and micro greens on top.
5. Drizzle extra virgin olive oil on top and serve.

Chickpea, Guacamole and Hummus Salad
This is a Chickpea, Guacamole and Hummus salad. It is a great sharing dish to enjoy with friends and family. I have added red pepper and red onion to mine but you can add what you like. I often add diced tomato and Avocado but feel free to experiment.

Ingredients
3 avocados
1 lime
1 tsp salt
1/2 onion
1/2 bunch cilantro
2 tomatoes
1 garlic clove
1 pinch chili pepper
Mash the avocado, mix with salt and lime juice, add chopped onion, minced garlic, diced tomatoes, chopped cilantro and a pinch of chili pepper. Mix everything well and enjoy!

This mash makes is very versatile. It makes a great sandwich, but also an excellent dip for parties too! Obviously, not everyone is a fan of sprouts, like we are, but this avocado-chickpea mash makes an excellent base to any sandwich.
