Brownie Gelato Cake made two different ways: Caramel Pecan and Chocolate Explosion!
Caramel pecan - brownie topped with caramel gelato, pecans, cool whip, and an extra drizzle
of caramel.
Chocolate explosion - brownie topped with chocolate gelato, oreos, cool whip, and
an extra drizzle of hot fudge! Which would you try first?!
Prep Time: 30 minutes
Cook Time: 15 minutes
Serves: 12
Brownie Bottom
1 (18.3 oz) box brownie mix, plus all other ingredients listed on the back of the box (oil, water, eggs)
Caramel Pecan
1/2 cup caramel ice cream topping
1 cup pecans, roughly chopped
1 (28.5 fl oz) container Breyers Gelato Indulgences Vanilla Caramel Gelato, softened
1 (8 oz) tub cool whip
Extra caramel and pecans for toppings
Chocolate Explosion
1/2 cup hot fudge ice cream topping
1 cup oreos, quartered
1 (28.5 fl oz) container Breyers Gelato Indulgences Triple
Chocolate Gelato, softened
1 (8 oz) tub cool whip
Extra fudge and oreos for toppings
Instructions:
• Make brownie batter according to box directions.
• Divide batter evenly into 2 (9 in) round pans that have been greased and lined with parchment
paper (see video for visual).
• Bake for HALF the minimum suggested time on the box (we needed 15 minutes).
• Allow brownies to cool completely before moving on to the next step.
• Once the brownies are cooled, top one with 1/2 cup caramel and top the other with 1/2 cup
hot fudge.
• Top the caramel with pecans and the hot fudge with oreos.
• Top the pecans with the softened caramel gelato and the oreos with chocolate gelato.
• Place both in the freezer until firm, at least 2-3 hours (depending on your freezer).
• Remove from freezer and top with cool whip and more toppings!
• Serve and enjoy!
• Store leftovers in the freezer.
*If you’re storing these in the freezer for longer than a few hours, they’ll need to sit at room temperature for about 15 minutes for easier slicing.

RECIPE HERE:
Grandma's Hot Fudge Sundae Cake Tutorial
Delicious chocolate cake that makes its own hot fudge sauce while it bakes, right in the pan! This is amazing served with any flavour of ice cream: mint, vanilla, chocolate, strawberry -- you name it!
Chocolate Fudge Ice Cream Cake
Here is what you'll need!
CHOCOLATE FUDGE ICE CREAM CAKE
Serves 12
INGREDIENTS
Brownie Base
½ package of brownie mix
Corresponding ingredients according to box instructions (egg/oil/water)
Chocolate Mousse Ice Cream Layer
1 cup heavy whipping cream
2 bars dark chocolate, broken into small pieces (we used 72%)
3 egg yolks
3 beaten egg whites
¼ cup granulated sugar
Garnish
½ bar of white chocolate
toothpick
PREPARATION
1. Preheat the oven to 350°F/180°C.
2. In a large bowl, combine brownie mix, egg, oil, and water until creamy.
3. Pour the brownie batter into a parchment-lined springform pan.
4. Bake for 25-30 minutes, until center no longer wobbles.
5. Leave the brownie base in the pan to cool completely.
6. Whip the heavy cream until it makes soft peaks. Set aside.
7. Separate the eggs and beat the egg whites until blended.
8. Pour water into a saucepan about half-full, and bring to a gentle simmer.
9. Place a heat-safe bowl over the pot of simmering water. (The bowl should be bigger than the saucepan, so that the bottom of the bowl doesn’t come in contact with the simmering water.)
10. Add the chocolate pieces to the bowl and stir frequently until smooth (make sure the water isn’t boiling, or you can burn the chocolate). Set aside.
11. In a second heat-safe bowl, whisk the egg yolks until blended.
12. Just like with the chocolate, place the bowl with the egg mixture on top of the gently simmering water, whisking heavily for about 2 minutes until it has a lighter color and a creamy texture. Set aside.
13. Whisk granulated sugar into the egg mixture. Slowly stir in the melted chocolate.
14. Carefully fold in the egg whites and the whipped cream until blended.
15. Spread the chocolate mousse over the cooled brownie base in the springform pan.
16. In a glass bowl, microwave the white chocolate in 15 second increments and stir until melted.
17. Pour the white chocolate into a plastic bag, cut off the tip and drizzle white chocolate all over the cake.
18. Using a toothpick or skewer, swirl white chocolate into the mousse in small circular motions to make a marbled pattern.
19. Freeze overnight.
20. Enjoy!
