How To make Micha's Brownie / Fudge Recipe
200 g Margarine
100 g Bitter Chocolate
1 1/4 c Sugar
3 Eggs
1 1/2 c Flour
1 ds Cognac or Vanilla
100 g Broken Nuts
Melt the margarine carefully then melt and stir the chocolate into it. Mix the other ingredients together, adding the eggs one at a time. Add half the broken nuts in the mixture. Pour the mixture into a glass baking tray. Bake in medium heat 25 - 30 minutes. It's done when you stick a toothpick in and it comes out dry. Don't overbake Cut into squares while still hot but leave in tray. My notes: Medium heat is about 375 degrees

Our Pies-Giving celebration and Giveaway continues! This time a nod to my current home state, North Carolina with Tarheel pie!
Tarheel is a moniker placed on anyone who resides in our state. Once thought of as a derrogatory term, the good people of NC persevered and turned that into a positive by owning the term and today we are the Tarheel state! North Carolina University's mascot is the Tarheel and we come by it honestly!
North Carolina boasts some of the largest pine forests on the east coast. Prior to the revolutionary war, North Carolina produced Pine Tar, Pine Pitch and Turpentine that was sent back to England for use in the ship building industry. Men who worked in this vocation often spent many days collecting pine tar and pine pitch and often would end up with the sticky substance on their shoes leaving Tar-heel prints where ever they went. Thus the term.
There is nothing derogatory about this pie, however! The pie is sort of a cross between a pecan pie and a chocolate chess pie and renders a very fudgy center, almost the consistency of a very underbaked brownie, with a top of crackly chocolate goodnes. Add to that the delicate flaky crust and you have a winner! Top this with some lightly sweetened cream for a taste to take you over the top!

►► INGREDIENTES ➜ 14 -16 raciones / molde 18cm ◄◄
► BIZCOCHO DE CAPUCHINO
● 3 Huevos L (o 4 talla M)
● 200g Azúcar moreno o mascabado (se puede sustituir por azúcar blanco normal)
● 160ml Aceite de oliva suave (se puede sustituir por otro aceite vegetal como el de girasol, canola o maíz)
● 240g Harina de trigo común todo uso
● 10g Cacao en polvo sin azúcar
● 2,5 Cdtas (tsp) Polvo de hornear o Levadura química
● 160ml Leche caliente
● 1 Cda (tbsp) de café instantáneo o soluble (6g aprox.)
● 1 Cdta (tsp) Extracto de vainilla
► BUTTERCREAM DE QUESO Y CAFÉ
● 350g Queso crema mascarpone, Philadelphia o Finlandia
● 200g Azúcar glass (azúcar impalpable o azúcar flor)
● 250ml Nata para montar (crema de leche o crema para batir) 35% M.G
● 1 Cdta (tsp) de café instantáneo o soluble (2g aprox.)
► DECORACIÓN (OPCIONAL)
● Nata montada o crema chantilly
● Chocolates en forma de granos de café
● Cacao en polvo para el stencil
● Ganache o sirope de chocolate
► GANACHE DE CHOCOLATE PARA DECORAR (OPCIONAL)
● 80g Chocolate negro
● 40ml Nata para montar (crema para batir o crema de leche) 35% M.G
● 20g Mantequilla sin sal
► BUTTERCREAM COMÚN DE CAFÉ (OPCIONAL)
● 300g Mantequilla sin sal
● 300g Azúcar glass (azúcar impalpable o azúcar flor)
● 1 Cda (tbsp) Leche
● 1 Cdta (tsp) de café instantáneo o soluble (2g aprox.)
► PREPARACiÓN BUTTERCREAM COMÚN DE CAFÉ
● Calentamos la cucharada de leche. Disolvemos el café y removemos hasta enfriar la mezcla. Reservamos en la nevera o refrigerador durante 5 minutos.
● Batimos a velocidad alta la mantequilla a temperatura ambiente durante 5 minutos.
● Añadimos el azúcar glass con un colador y batimos 5 minutos más.
● Agregamos la mezcla de café y leche a la buttercream. Batimos a velocidad alta 2 minutos más y ya tenemos nuestra buttercream de café!
