How To make Fruit Scones
2 1/2 c All-purpose flour
2 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1/2 c Sugar
6 tb Cold butter,
-cut in small pieces 1/2 c Raisins (plumped)
1 Egg, beaten
1 c Plain yogurt (8oz carton)
Grated peel of 1/2 lemon Milk for brushing on scones Butter A little heaver than plain scones. Make them slightly smaller than normal and serve without jam or cream. Preheat oven to 425F (220C). Lightly grease a large baking sheet; set aside. Sift flour, baking powder, baking soda, and salt into a large bowl. Stir in sugar. With your fingers, rub in butter pieces until mixture is crumbly. Mix in raisins. With a form, stir in egg, yogurt and lemon peel and blend well to make a dough that BARELY holds together (you may need to press dough together with your hands). Turn out onto a floured surface. Roll out with a floured rolling pin or pat dough with your hands to make a round about 1/2-inch thick. Cut in rounds with a 1 1/2 inch fluted or plain cookie cutter. Place 1 to 1 1/2 inches apart on baking sheet; brush tops lightly with milk. Bake 10 to 12 minutes or until scones are well risen and golden. Transfer to a wire rack to cool for 5 minutes. Split and serve warm with butter. Makes about 18 scones.

Ingredients
Scones
3 cups (300 g) all-purpose flour
¼ cup (50 g) sugar
1 Tbsp (15 g) baking powder
¼ tsp (1 g) salt
1 Tbsp (6 g) finely grated lemon zest
½ cup (115 g) cool unsalted butter, cut into small pieces
½ cup (125 ml) whipping cream
¼ cup (60 ml) 2% milk, plus extra for brushing
1 large egg
1 tsp (5 ml) vanilla extract
1 cup (160 g) fresh or frozen cranberries
Glaze
1 cup (130 g) icing sugar, sifted
1 ½ (22 ml) Tbsp lemon juice
Directions

1. Preheat the oven to 375 F and line a baking tray with parchment paper.
2. Sift the flour, sugar, baking powder and salt into a large bowl. Stir in the lemon zest. Cut in the butter until the mixture is rough and crumbly but still small pieces of butter are visible.
3. In a separate bowl, whisk the cream, milk, egg and vanilla together. Add this to the flour mixture and stir to just bring the dough together, turning out onto a work surface to complete bringing it together with your hands. Flatten the dough out and press the cranberries into the dough, folding it over and flattening it out a few times to incorporate the cranberries.
4. Shape the dough into a disc about 10-inches across. Cut the disc into 8 wedges and place them on the prepared baking tray, leaving a few inches between them. Brush the scones with a little milk and bake for 20 to 25 minutes until the scones are lightly browned on top. Cool completely before glazing.
Glaze
1. For the glaze, whisk the icing sugar and lemon juice together and drizzle over the scones using the whisk or a fork. Let the glaze set for an hour before serving.
2. The scones are best enjoyed the day they are baked.

Fruit Scones
makes 8 to 10 scones
500g x Self-raising Flour
75g x Caster Sugar
125g x Butter
1tsp x Baking Powder
2 x Eggs (+ 1 for glazing)
90g x Dried Fruit
Milk to Bind
Chantilly Cream
300ml x Double, Heavy or Whipping Cream
30g x Icing Sugar
1 tsp x Vanilla Extract
Strawberry Jam and Fresh Strawberries
1. Place the flour, baking powder, sugar, and butter into a mixing bowl. Rub between your fingers and thumbs until it resembles breadcrumbs.
2. Chop the dried fruit as small as you can and add to the flour mixture. Mix and make a well in the centre.
3. Crack in two eggs and add a splash of milk. Mix with a fork until it comes together to form a dough. You may need to keep adding small amounts of milk until you get a firm dough. If the mix becomes too wet just add more flour until it feels firm to the touch.
4. At this stage, preheat the oven to 170°C and lightly flour a workbench. Turn out the dough and press together with your hands to form a round shape. Roll out using a rolling pin to 1.5 inches in thickness.
5. Grab a cookie or sone cutter and being to cut out your scones. Press down firmly without twisting the cutter. Place the scones onto a baking sheet lined with parchment paper.
6. Glaze the tops of the scones with a beaten egg. Place in the preheated oven and bake for 18 to 20 minutes. Place onto a cooling rack to cool.
7. For the Chantilly cream place the cream, icing sugar, and vanilla extract into a mixing bowl and whip using a whisk until it holds its shape.
8. Once cool break or cut the scones in half and fill with a good dollop of chantilly cream and a spoonful of strawberry jam. Finish with some slices of fresh strawberries.

Fruit Scone Recipe easy
Here I am making easy fruit scones . This recipe is very easy and will make about 8 delicious fruit scones for only 0.14p each.
Fruit Scones.
300g SR Flour 0.15
80g Unsalted Butter 0.60
1 tsp Baking powder 0.03
Punch of salt 0.00
30g Castor Sugar 0.05
100g dried fruit 0.25
150ml Milk 0.09
Total £1.17
The recipe should make about 8 scones @ 0.14p each
Mix the Flour - Baking Powder and salt together in a bowl.
Add the cooled butter and rum in.
Add the sugar and fruit and stir.
Stir in the milk and bring to a dough.
(The idea is not to overwork the dough and to keep it light)
Roll out to about 2.5 - 3cm
Cut into scones, put on a baking tray and brush the tops with egg or milk.
Bake in an oven at 200c for 12 - 15 mins

500g | 4 cups of Plain Flour
30g | 3 heaped tsp of Baking Powder
Pinch of Salt
80g | ⅓ cup + 1tbsp of Sugar
100g | 1 stick of Butter
2 Eggs
200ml | ¾ cup of Buttermilk
150g | 1 cup of Raisins
Eggwash - 1 egg yolk mixed with a pinch of salt and sugar
Baking powder already contains an acid unlike bicarbonate of soda. So you can use either regular or buttermilk
I find that buttermilk makes them soft and fluffier.
For a sourmilk buttermilk substitute add 1.5 tbsp of vinegar or lemon juice to some full milk or milk of your choice. Stir and let it stand for about 10 minutes before adding it to the dry ingredients
Bake at 200 C / 392 F for 18 minutes (fan off)
Fan - 180 C / 356 F

Everything I used - Makes 5 -6 large scones (you’ll get more using a smaller cutter than I did)
75g (2.6 oz) Cold butter - Salted or unsalted are both fine
300g (10.5 oz) Self raising flour
75g (2.6 oz) Caster sugar
2 Teaspoons baking powder
140g (4.9 oz) Sultanas or raisins
85g (2.9 oz) Double cream - Use heavy cream if you can’t find double cream
85g (2.9 oz) Whole (full fat) milk
300g (10.5 oz) Double cream - Use heavy whipping cream if you don’t have double cream
2 Tablespoons icing sugar - or confectioners sugar
75g (2.6 oz) Raspberry - or strawberry jam
75g (2.6 oz) Raspberry - or strawberry dessert sauce
A few strawberries - quartered
*** A shake of icing or confectioners sugar just before serving - Optional ***
