Frittata Recipe
Ingredients for a 6 inch cast iron pan frittata
4 eggs, pasture raised
Handful of cooked broccoli or other veggie, cut into small pieces
Handful of organic spinach, rinsed and cut into pieces
Handful of fresh basil, chopped into small pieces
½ cup of yellow onion, diced small
Handful of fresh basil chopped small
3 cremini or other mushrooms, chopped fine or thinly sliced.
2 slices prosciutto, rolled and cut into small pieces, can substitute bacon or leave out.
Grated parmesan cheese
¼ cup milk or milk alternative
Olive oil
Garlic powder
Salt to taste
Pepper to taste
Directions:
Pour about 2 teaspoons of oil in the cast iron pan and brush the oil up the sides. Place the pan over medium heat. Add the onions and the mushrooms and stir frequently. After 10 minutes add the prosciutto to the pan and cook that for about 5 minutes or until it crisp up a bit.
In a medium bowl add the eggs, the milk and a sprinkle of garlic powder, whisk until well blended.
To the onion/mushroom mixture in the pan, add the chopped broccoli, the spinach and basil, spreading evenly overall.
Pour the egg mixture over the top and cover with a lid over medium low heat for about 10 minutes. After 10 minutes you may notice there is still liquid in the center of the pan. This will cook under the broiler.
But first grate some parmesan cheese over the top of the frittata and place the pan on the second shelf from the top. Keep an eye on this so it doesn't overcook. This should only take 1 to 2 minutes to melt the cheese and brown up.
Cut the frittata into pieces. This recipe should serve 2 or 1 very hungry person!
Tips And Ideas
Feel free to double the recipe for a larger frittata and to use any and all veggies you like. The cheeses can be changed up to include feta, goat cheese, cheddar, monterey etc.
If you were to use other greens like chard or kale, you would want to cook that up a bit with the onions and mushrooms so they will soften up prior to add the eggs. Enjoy!
