How To make Leftover Pasta Frittata (Ovo)
3 Eggs whites
1 ea Leftover pasta
1 ea Seasonings to taste
Mix up 3 or so eggs whites, beat lightly pour over pasta , dump in a hot frying pan {pammed lightly} and fry up like an omlette. Flip each side when nicely brown. Pasta and Tomato Frittata Recipe
Howdy, folks! I finally got a vegetarian cooking video up for you. Let me know how this turns out when you make it. It's a favorite of mine, and the hubby likes it as well! We hope it falls favorably on your taste buds, too! :)

* * * * * * * * * * Recipe * * * * * * * * * *
INGREDIENTS:
6 eggs
1/4 cup milk or half and half
1/2 cup cheese, cubed
3 cups cooked pasta
2 tablespoons basil leaves
2 tablespoons parsley
2 teaspoons lemon juice
1/2 tsp salt
1/2 tsp cayenne pepper
2 tablespoons olive oil
1 medium-sized tomato, diced
**OPTIONAL - you can add other vegetables like spinach or mushrooms if you'd like! :)
DIRECTIONS:
1) Boil your pasta and set aside.
2) In a large bowl, whisk together all the eggs and milk.
3) Stir in all spices, cheese, and pasta, then set aside.
4) In a pan, saute tomatoes in oil over medium heat for roughly 2 minutes.
5) When tomatoes are ready, pour egg and pasta mix over them and cook for roughly 7 minutes until edges have browned.
6) Once frittata consistency is almost where you want it, place skillet in oven and broil until top is set, which usually takes about 5 or so minutes (I set my broiler around 500 degrees F).
7) Slice it up and serve! :)

Fresh Egg Frittata
A frittata is one of my favorite things to make, especially with fresh eggs, only minutes old. While visiting friends in Santa Barbara, I made myself at home in the kitchen. A frittata can be home to lingering leftovers;
bits of cheese, leftover pasta, herbs, olives, vegetables. It's easy and quick and oh so delicious. Thanks to Matt Walla, photographer and filmmaker, for filming and sharing the finished product. It was just a whim.

Ingredients and recipe:
Pour 1 can of corn in a colander
Crack 1 egg in the corn
Salt and black pepper
Add 1/3cup corn starch
Mix well
Pour olive oil in the pan
Add the corn mixture to the pan
Sprinkle 30g mozzarella cheese
Fry for 5 minutes on medium-low heat
Sprinkle green onion on top
Done!
