How To make Frittata Di Spaghetti (Spaghetti Frittata)
1 ts Olive oil;
4 sl Prosciutto or ham; diced
-about 1/4 lb 6 lg Eggs;
3 tb Parmigiano-Reggiano cheese;
x Salt & pepper to taste; 1/4 c Basil or parsley; chopped
2 c Cooked spaghetti;
1 1/2 c Mozzarella or other cheese;
-cubed (about 6 oz) 1/4 c Olive oil;
4 tb Butter;
In a frying pan, saute the prosciutto or ham in the olive oil until crispy. Drain on brown paper. (I used paper towels) In a large bowl, beat the eggs. Add the Parmigiano-Reggiano, salt and pepper, and basil or parsley. Add the spaghetti and mix well, then stir in the mozzarella cheese and proscuitto. In a 9-inch frying pan, heat 2T of the butter and 2T of the olive oil. Add the spaghetti mixture and smooth the top with a spatula. Cook over medium-low heat until the frittata is browned on the bottom and set. Invert a plate larger than the frying pan over the pan and turn out the frittata. Heat the remaining butter and olive oil in the pan, and return the frittata to the pan to brown the other side. Shake the pan occasionally to keep the frittata from sticking. Invert a serving plate over the frying pan and carefully turn out the frittata. Serve at room temperature, cut in wedges. (like a pie) NOTE: This is even better the day after it is made. (She's not kidding) My Note: It doesn't usually last in my house till the next day. Frittata of spaghetti, Frittata di spaghetti | Italian cooking mama
????Spaghetti Omelette in Italian (La Frittata di Spaghetti) otherwise known as “frittata di maccheroni”, is a classic dish of Neapolitan kitchen.
It is born to waste anything left on the table, especially left over pasta.
By simply adding a few eggs, some grated cheese, salt, and a few grinding of black pepper to the remaining pasta, you can enjoy a delicious dish.
It’s possible to include some small cubes of cooked ham or Neapolitan salami and/or thin slices of local cheese, such as caciocavallo, mozzarella, or provola affumicata (smoked mozzarella).
This spaghetti omelette is typically served warm, or even better, at room temperature for a light meal, snack or as a tasting appetiser, It’s also generally included as a part of a packed outdoor lunch or for a day at the beach with the family and friends.

In a 9’5 inches frying pan (24 cm)
250 gr spaghetti
6 eggs
100 gr grated parmigiano
100 gr cheese (optional)

Frittata di Spaghetti
Ingredienti
per 4 persone
300 gr Spaghetti
4 uova
prosciutto piselli
parmigiano mozzarella
sale pepe olio
FRITTATA DI SPAGHETTI A MODO MIO la frittata di spaghetti in padella
La frittata di spaghetti e anche la frittata di maccheroni sono piatti nati per recuperare la pasta del giorno prima ma è talmente buona che si prepara appositamente.
Una grande pentola di acqua bollente leggermente salata, per 4 persone, 300 grammi di spaghetti.
Nel frattempo in una padella antiaderente diametro 26 cm poco olio e faccio rosolare del prosciutto o della pancetta.
Frittata di spaghetti è un piatto di recupero e quindi potete mettere dentro tutti gli ingredienti che avete in frigorifero.
Nella stessa acqua degli spaghetti, se vi piacciono, metto 50 grammi di piselli surgelati.
Appena cotti gli spaghetti li tiro fuori insieme ai piselli in una ciotola grande.
Aspetto 5 minuti e aggiungo il prosciutto, 4 uova sbattute, 20 grammi di parmigiano e la mozzarella per ultima.
Nella frittata di spaghetti sono molto buone anche le zucchine o i funghi trifolati.
Mischiare bene e mettere gli spaghetti nella stessa padella del prosciutto.
Fornello fiamma bassa per 10-12 minuti. Girate la frittata di spaghetti e fare cucinare ancora 5 minuti.
Mangiate caldo o freddo, come preferite.
