How To make Fresh and Smoked Salmon Pate
1/4 c Heavy cream
1/4 c Dairy sour cream
3 c Cold water
1 Peeled and sliced thin
Carrot 1 Thin sliced small onion
1 Bay leaf
3 Thin lemon slices
1 Fresh red chili pepper
1 lb Fresh salmon fillets w/skin
4 Shallots fine chopped
1 1/2 tb + 1/2 cup (1 stick)
Unsalted butter at room Temperature 8 oz Smoked salmon diced
2 tb Lemon juice
1 1/2 ts Salt
1/4 ts White pepper
1 tb Fine chopped fresh dill
Plus a few sprigs for Garnish 6 tb Clarified butter
Whish together heavy cream and sour cream in small bowl. Refrigerate. Combine cold water, carrot, onion, bay leaf, lemon slices and chili pepper in skille

Take a taste of Alaska to your next party. This is a really easy dip to make and it's a guaranteed crowd pleaser. Amaze your friends when you whip up this 8 ingredient recipe. I bet you have all the stuff on hand right now except perhaps the smoked salmon. Don't worry you can grab a package of it at the store and still have time to prepare the dish before your evening dinner/party. For my good friends that have to eat pickled herring tomorrow night please try this dish!
Ingredients:
4-6 oz smoked salmon (approx. 1-1.5 cups when flaked/crumbled)
4oz softened cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon mustard
1-2 teaspoons chipotle tabasco (more is better)
1/8 teaspoon fresh ground pepper
1/4 cup chopped green onions

Smoked salmon brunch for less that 2 bucks? Yes please. This is a very simple recipe that packs loads of flavour. It's healthy and it takes 5 minutes to make. Your family will love it.
If you can find salmon trimmings like the ones I'm using you will save a lot. This is only £13 per kilo as opposed to the thin sliced salmon that is around £25 per kilo. This trimmings is what remains after the smoked fillets are cut and packed. Same taste same flavour much cheaper. No brainer.
Ingredients:
1 Shallot – £0.10
240g Smoked Salmon – £3.10
100g Crème cheese – £0.40
150g Crème Fraiche - £0.50
1 Lemon - £0.20
25g Chives - £0.25 (dill also works)
4 Slices Bread - £0.40
1 Clove Garlic - £0.05
Total = £5.00
1.25£ per Portion
Method:
1. Add your shallot and lemon juice to a mixing bowl for a few minutes to allow the acid in the lemon to cook the shallot.
2. Toast your bread on a pan or toaster.
3. Mix all the rest of your ingredients.
4. Rub garlic on your bread for amazing crostini.
5. Serve with chives sprinkled on top.

150gm smoked salmon for the mousse (incl Trimmings)
20 gm unsalted butter, softened
1/2 cup of shellfish stock or fish stock or chicken stock
2 gelatine leaves
2 drops of Tabasco
¾ cup double cream, chilled
Make your own Salmon pate
Delicious salmon pate, just spread onto your favourite crackers.
You'll need :
Salmon flakes
200 gms cream cheese
Tbs mayonnaise
Lemon zest
Cracked black pepper
