Quiche Lorraine: the French recipe of the fabulous rustic pie!
INGREDIENTS
200 g bacon
100 g leek
5 eggs
200 ml cream
Nutmeg
Salt
Pepper
Shortcrust pastry
200g emmental cheese
METHOD
Place the bacon strips in a pan with the leek slices. Cook until golden.
Pour the eggs into a bowl, add salt, pepper, nutmeg, and cream, and mix.
Place a sheet of shortcrust pastry on a round baking tray. Arrange the shortcrust pastry, pressing the edges and removing the excess.
Prick the pastry with a fork.
Add the leek and bacon mixture.
Add cheese cubes and pour over the egg and cream mixture. Bake at 180ºC (356ºF) for 45 minutes.

How to make Quiche Lorraine ( French pie with smokey bacon :)
Video recipe for Dough + Filling of the Quiche Lorraine. This results in a golden brown moist pie stuffed with smokey bacon, eggs and cream. Creamy and delicious !
Ingredients
---------------
For the Dough :
- 300g flour (simple one T55)
- 150g butter
- 1/2 teaspoon of salt
- 8cl milk ( 2 drips, you may watch the video for an example)
For the Filling :
- 3 eggs
- 1 cup milk (20cl)
- 1 cup double cream (20cl)
- 300g smokey bacon in thick slices
Cookware
--------------
- Frying pan
- Pie dish
- Baking paper
- Rolling pin
- Knife (if needed for the bacon)
- Bowl
Instructions
----------------
Making the dough :
- Big bowl : add 300g of flour
- Add the salt
- Soften the butter in microwave ( 20s)
- Mix gently with the tip of your finger
- Add a drip of milk
- Mix gently with the tip of your finger
- Add a drip of milk (lol: yes i did copy paste)
- The dough should be soft and not overworked : this way, it will be crumbly out of the oven.
- Place it between two sheets of baking paper
- Spread it to 3 - 4 mm thick
- Cover the pie dish and remove the upper layer
- Prick the pastry so that it doesn't rise (you can even put some dry beans on the pastry to prevent it)
- Bake in oven 20 minutes at 200°C or 400°F
- This is called in french Cuire à Blanc ( pre cook a pastry )
Making the filling
- Cut the smokey bacon into small pieces ( dice it :)
- In a bowl : 3 eggs
- Add the cup of milk and the cup of double cream
- Season with salt and pepper
- Fill the pre cooked pastry with dices of bacon
- Pour the creamy liquid on top.
- Bake in oven for at least 45 minutes at 200°C or 400°F
- Low position in the oven allows the dough to taste better
- It comes swollen but after 15 - 30 min, it will subside...
Very simple dish, easy to make and it can be kept in fridge for a few days.
When you come back after a long day of work, a slice of Quiche lorraine with salad is a prefect easy-quick-and-tasty dish.

Healthy Mini Bread Quiche Recipe
Ingredients :
- 8@9 slices sandwich bread
- 3@4 Eggs
- ½ cup Fresh Milk
- Pepper & Salt to taste
- Parsley (optional)
- Minced beef (boiled)
- Minced chicken (boiled)
- Any side of vegetable of your choice. (I use green bell pepper, red bell pepper & tomato)
- Any cheese of your choice. (I use cheddar slices)
Methods :
- Boil the minced beef & minced chicken.
- Preheat oven to 180°C.
- Break the eggs into a jug. Add fresh milk, salt, pepper and parsley (if using). Mix to combine, using a whisk to make the egg mixture.
- Lightly grease a muffin pan.
- Use a rolling pin to roll out each slice of bread until thin.
- Cut bread into rounds and cut the crusts off.
- Press the bread into the muffin pan.
- Divide the minced beef, minced chicken, vegetables of your choice, and cheese among the bread cups in the muffin pan.
- Pour enough the egg mixture carefully into each cup.
- Bake for 20 minutes or until set.
- Remove from oven and rest for 5 minutes before serving. The filling will be puffed up but it will deflate while resting.
- Garnish with extra parsley if desired.
- Ready to serve.

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.
