FABULOUS FRENCH BREAD RECIPE:
2 1⁄2 cups warm water 2 T. cooking oil or olive oil 2 T. yeast 5-6 cups bread flour 2 T. granulated sugar 1 egg, beaten 1 T. salt Poppyseeds; sesame seeds (optional)
In a large mixing bowl (or Kitchen-aid) pour warm water over sugar and yeast. Allow yeast to dissolve and become puffy. Stir in salt, cooking oil and 2 cups flour. Beat vigorously. Stir in remaining flour 1 cup at a time until it is too hard to mix. Put dough out on clean floured surface and let rest for 10 minutes.
Knead vigorously and add more flour if needed until you have a smooth dough that is easy to handle. Allow dough to rest another ten minutes. Punch down and knead slightly every ten minutes for the next 50 minutes (5 more times). Divide dough in half with a long serrated knife. Roll dough into a 9x12 inch rectangle. Begin to roll the dough lengthwise in a loaf, tucking ends in as you roll.
When completely rolled up, pinch edges together to make a seam down the loaf and place seam side down on parchment paper on baking sheet. Roll out other dough in the same manner and place loaf a few inches apart from the other loaf, on the same sheet.
Allow to rise for 30 minutes, covered with a clean kitchen towel. Preheat oven to 400 degrees. Beat egg in a small bowl. Just before putting bread into oven, with a sharp serrated knife, carefully make 3 diagonal slashes on top of each loaf to allow steam to escape. Be sure NOT to smash your risen loaf. (A razor blade works well, too). Brush loaf 240
with egg with pastry brush to make a beautiful crust. Bake for 22-28 minutes. Let cool slightly before serving. You can sprinkle loaves with poppy seed or sesame seed, after coating loaves with egg, if desired, before baking. Serves 12. Notes: This is bread is so delicious it will WOW your guests. If you have leftovers, makes great sandwiches and French toast.
