✅Ingredients
• 1½ tablespoons instant dry yeast
• 2 cups warm water
• 1½ teaspoons salt
• 4½ - 5 cups all-purpose flour
• 1 large egg, beaten
✅Instructions
1️⃣ 00:00:27 - In the bowl of a stand mixer, add yeast, water, salt, and 5 cups of flour. Knead on a slow speed until the flour has started to combine. Increase speed to medium and gradually add in remaining flour until dough pulls away from the sides of the bowl.
2️⃣ 00:01:46 - Transfer to a lightly greased mixing bowl, cover with a towel, and let rise until double in size, about 1 hour.
3️⃣ 00:02:06 - Divide dough in half. Roll each half into a large rectangle. Roll up tightly from the long end.
4️⃣ 00:02:50 - Place onto a lightly greased baking sheet or into a french bread pan. Cover and let rise 30-45 minutes.
5️⃣ 00:03:34 - Preheat oven to 375 degrees. Use a sharp knife to cut diagonal slashes on the top of each bread loaf, about 1/4 inch deep. Brush loaves with beaten egg.
6️⃣ 00:03:53 - Bake in preheated oven for 35-40 minutes, until golden brown.

Authentic French Baguette Recipe
Authentic french baguettes with air pockets that look like honeycombs!
It features a moist texture with high hydration.
All purpose flour is added, it features a soft texture!
Mukgling's baking method uses the No Knead method.
Using the minimum tools, seek bread making at home easily.
Anyone can make bread easily.

■ Dough Formulation
B's (%): 65.0%, Tr (g): 163.0g All purpose flour
B's (%): 35.0%, Tr (g): 88.0g Strong Flour(Bread Flour)
B's (%): 2.0%, Tr (g): 5.0g Salt
B's (%): 0.4%, Tr (g): 1.0 g Instant Yeast
B's (%): 75.0%, Tr (g): 188.0 g Water (27℃)
■ Process

1. Put water in the bowl.
2. Put the instant yeast.
3. After 1 minute, mix evenly the instant yeast.
4. Add salt and dissolve.
5. After adding flour,
Mix evenly until the flour is invisible.
6. After 30 minutes of rest, the first fold (folding)
7. After 60 minutes of rest, the second fold (folding)
8. After 30 minutes of rest, split 100g
9. pre shaping, At room temperature for 20 minutes
10.Mold in baguette shape (length: 19cm)
11.Second fermentation: 30 minutes at room temperature
12.Preheat oven.
Oven temperature is raised as high as possible during the second fermentation to preheat
(my oven maximum temperature 250℃)
Preheat the lodge in a fully-heated oven for at least 20 minutes.(Lodge LCC3 Cast Iron Combo Cooker, Pre Seasoned, 3.2-Quart)
13.Cut the second fermented dough surface with a knife(use coupe knife).
14.Put the dough into the preheated lodge 10-inch combo cooker floor
15.Cover the lid of lodge 10-inch combo cooker.
16.Put it in the oven
17.After baking for 16 minutes, remove the lodge cover and continue baking for 9 minutes.(total: 25 minutes)
■ Note: Always be careful when using oven, lodge combo cooker
(It is very hot, so use it after wearing very thick oven gloves)

Simple, Everyday French Bread At Home
Printable recipe:
INGREDIENTS
1 cup warm water
2 1/4 teaspoons traditional or instant yeast
1 teaspoon salt
2 1/2 cups all-purpose white flour (plus more for kneading)
DIRECTIONS
Combine water with yeast and let bloom for 10 minutes. If you have any trouble with this step, read this troubleshooting yeast guide:
Add a half cup of flour and salt to the yeast mixture and whisk together until smooth.
Add two more cups of flour and stir together until the dough comes together.
Using clean hands, knead the dough into a ball. You may do this right in the bowl or turn it out to a floured surface. It may be stiff; just work it until it's a cohesive ball.
Place the dough into a clean bowl, cover and let rest for 15. This lets the gluten in the flour relax, making it easier to knead.
Turn the dough out on to a lightly floured surface and knead until smooth and elastic. Ideally you would knead this for 10 minutes.
Place the dough back in the bowl, cover and let rise for in a draft-free, warm location for one hour or until the dough has doubled in size. A good place for this is in the oven with just the oven light on.
Punch down the dough and knead again for a few minutes.
Place the dough back in the bowl to rise for a second time. Again, let it rise for one hour or until doubled in size in a warm location.
Remove the dough from the bowl, punch it down and divide the dough into equal pieces. You can make two large loaves or four smaller loaves.
Shape them into long loaf shapes and place them on a baking pan lined with parchment paper.
Cover the loaves with a damp, lint-free cloth and let rise for 45 minutes or until the loaves have doubled in size.
Place a metal baking pan on the bottom rack in your oven. DO NOT USE GLASS. Place the second rack in the middle of the oven.
Preheat the oven to 450 F (232 C).
Prepare a spray bottle with water and, separately, a cup of cool or room temperature water.
When the oven is hot, remove the cloth from the dough carefully. If the dough sticks to the cloth, drip some water on top of the cloth to help it release.
Make slashes on the top of the loaves, either a few diagonally across the loaves or one slash down the length.
When the oven is well-heated, place the loaves on the middle rack and quickly pour the cup of water in the baking pan below and close the oven door. Be careful as there will be steam.
Bake for 25 minutes or until the tops look golden. This is a very hot oven so be careful. Some ovens can run hotter than the indicator says so please check on it early.
Remove the loaves from the oven and cool them on a wire rack. The tops of the loaves should be golden brown and they should sound hollow when tapped on the bottom.
Wait at least a half hour before slicing.

4 cups flour (500g).
1 tsp salt.
Cover with lid and Bake at 220°C / 428°F for 30 minutes. Then remove lid and bake another 15 to 20 minutes.
