The freeze drying community just keeps growing! and with the growth of members, we get creative minds, more user experiences and great ideas for recipes. Things that I did not think were possible a few years ago, now seem totally possible to freeze dry! We are doing freeze dried enchiladas with homemade sauce. Freeze drying enchiladas was something that I would not be able to do....until now. For our enchilada filling, we are doing a sweet potato and black bean with avocado and topping it with an amazing sauce from scratch.

Enchiladas 2 Ways! - freezer meals
These are my favorite way to eat enchiladas. None of my recipes have amounts here because it will depend on how much you want to make.
Cheese Enchiladas:
Nacho Cheese
Corn tortillas
Shredded fiesta blend cheese
Spread nacho cheese on the bottom of a glass baking pan. Layer corn tortillas to cover the bottom. Layer shredded cheese and dollops of nacho cheese. Cover with a layer of corn tortillas and repeat leaving 1/2 inch in the pan. Bake for 30 minutes at 350 degrees.
Green Chili Enchiladas
Green Chili Enchilada Sauce
Shredded Chicken breast
Corn tortillas
Shredded fiesta blend cheese
Mix green chili with the shredded chicken setting half aside to use on the layers as well. Spread green chili along the bottom of the pan. Layer corn tortillas to cover the bottom. Layer shredded cheese, chicken, and pour over green chili Cover with a layer of corn tortillas and repeat leaving 1/2 inch in the pan. Bake for 30 minutes at 350 degrees.

Easy White Chicken Enchilada Casserole

These white chicken enchiladas are so good and so easy to make with flour tortillas, seasoned shredded chicken breast, canned green chiles, Monterey Jack cheese, and a simple white enchilada sauce made with sour cream.

Baking Instructions:
Bake in the oven at 350 degrees F for 15-20 minutes or until the cheese has melted and the tops of the enchiladas are a light golden brown.
Ingredients:
Chicken Filling
▪️ 2 cups shredded cooked chicken breast
▪️ 1/2 tsp cumin
▪️ 1/4 tsp cayenne
▪️ 1/2 tsp garlic powder
▪️ 1/2 tsp onion powder
▪️ 1/2 tsp oregano
▪️ 1/4 tsp salt
▪️ 1/4 tsp ground black pepper
▪️ 2 cups shredded Monterey Jack Cheese, divided
▪️ 8 medium-large flour tortilla shells (I like to use fajita size)
White Enchilada Sauce
▪️ 14.5 oz can chicken broth (low sodium, preferred)
▪️ 2 tbsp unsalted butter
▪️ 2 tbsp flour
▪️ 1/2 tsp salt
▪️ 1/4 tsp cumin
▪️ 3/4 cup room temperature sour cream (or plain non-fat Greek yogurt)
▪️ 4 oz can diced green chiles (mild or hot, depending on preference)
▪️ 1 cup shredded Monterey Jack cheese

3 lbs (1.36 kg) beef brisket flat (or chuck roast)
1 package beef onion soup mix
1/4 packed cup dark brown sugar
2 Tbsp chili powder
1 Tbsp smoked paprika
1 Tbsp garlic powder
1 Tbsp lemon pepper
3/4 cup ketchup
1 Tbsp Worcestershire sauce
1 Tbsp apple cider vinegar
4.5 qt slow cooker
BABY LIMA BEANS SOUP
1 lb (454 g) dry baby lima beans (rinsed)
1 3/4 lb (793 g) smoked turkey legs
1 bunch of rainbow chard (optional)
1/2 small onion (diced)
1/2 large bell pepper (diced)
1 large celery stick (diced)
3 cloves garlic (minced)
1 dried bay leaf
1 tsp dried oregano
1 tsp dried thyme
1/2 Tbsp light brown sugar
1 Tbsp chicken bouillon powder
2 tsp Creole seasoning
1/4 tsp black pepper (I forgot this in the video)
8 cups water
