1 lb Lean ground beef round
1 T Instant minced onion
1 Clove garlic, peeled and
-crushed 1 t Pepper
2 1/2 t Chili powder
2/3 c Water
8 oz Can tomato sauce
2 c Sharp Cheddar cheese,
-shredded 1/4 t Salt
6 Tortillas or taco shells
1. Crumble beef into a shallow, 2 1/2-quart, heat-resistant, non- metallic
casserole. Sprinkle meat with minced onion and crushed garlic. 2. Heat, uncovered, in Microwave Oven 5 minutes. Stir oc- casionally to
break up meat. 3. Drain excess fat. Add pepper, chili powder, water and tomato sauce. Stir
to combine. Heat, uncovered, 4 minutes in Microwave Oven. 4. Alternately layer tortillas, meat sauce and cheese in a round-1
1/2-quart,
heat-resistant, non-metallic casserole. Last layer should be cheese. 5. Heat, covered, in Microwave Oven 7 to 9 minutes or until cheese is
melted.

These white chicken enchiladas are so good and so easy to make with flour tortillas, seasoned shredded chicken breast, canned green chiles, Monterey Jack cheese, and a simple white enchilada sauce made with sour cream.

Baking Instructions:
Bake in the oven at 350 degrees F for 15-20 minutes or until the cheese has melted and the tops of the enchiladas are a light golden brown.
Ingredients:

▪️ 2 cups shredded cooked chicken breast
▪️ 1/2 tsp cumin
▪️ 1/4 tsp cayenne
▪️ 1/2 tsp garlic powder
▪️ 1/2 tsp onion powder
▪️ 1/2 tsp oregano
▪️ 1/4 tsp salt
▪️ 1/4 tsp ground black pepper
▪️ 2 cups shredded Monterey Jack Cheese, divided
▪️ 8 medium-large flour tortilla shells (I like to use fajita size)
White Enchilada Sauce
▪️ 14.5 oz can chicken broth (low sodium, preferred)
▪️ 2 tbsp unsalted butter
▪️ 2 tbsp flour
▪️ 1/2 tsp salt
▪️ 1/4 tsp cumin
▪️ 3/4 cup room temperature sour cream (or plain non-fat Greek yogurt)
▪️ 4 oz can diced green chiles (mild or hot, depending on preference)
▪️ 1 cup shredded Monterey Jack cheese

Easy Enchilada Casserole (remake)
This is an easy enchilada casserole that my mom used to make. It's so creamy and perfect for cooler weather.
TIP: Use the larger can of evaporated milk and leave out the corn tortillas to make a delicious taco dip!

RECIPE:
2 lb browned ground meat
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 10oz can Enchilada Sauce (soup size)
1 small 5oz can of Evaporated Milk
1 lb Velveeta Cheese (cubed)
1 12 pk Corn Tortillas
Brown and drain the meat and add all ingredients together.
Stir until all the cheese is melted.
Layer in a 9x13 casserole dish starting with the cheese mixture.
Bake at 375F for 40-45 minutes.
Cool 10 minutes and serve with salad and Spanish rice.
