Ingredients:
-hand full of coriander leaves
-few mint leaves
-8-9 garlic pods
-1 inch of ginger
-7-8 green chillies
-1 cup of water
-2 spoon vinegar
-banana leaves
- olive oil
- vinegar
Method:
- In a grinder blend together - coriander leaves, mint leaves, garlic pods, ginger, green chillies
- In a cup or mug of water add two spoons of vinegar. So that the vinegar dilutes in it
- Now keep adding the water into the mixture until you get the desired consistency
- Heat up the banana leaves over the gas
- Add olive oil and vinegar to the paste
- Apply the spice mix over the fish on both sides and then fold the banana leaf
- In a way that the fish is cover properly
- Place a sieve over a pan in which the water is boiling
- Place the fish on the sieve and cover it
- Keep it for 7 minutes, equal time for both sides.
- Steamed Fish is ready to be served.

Tandoori Mint Chutney recipe :
Coriander leaves - 1 Cup
Mint Leaves - ½ Cup
Cumin Powder - ¼ tsp
Chaat Masala - ½ tsp
Lemon Juice - 1 tsp
Salt - 1 tsp
Water - ¼ Cup
Curd - ½ Cup
Cooking Instructions:
1. In a mixer jar, add in the coriander leaves, mint leaves, cumin powder, chaat masala, lemon juice, salt and water. You can also add the young stalks of the coriander leaves for the chutney.
2. In a bowl, whisk the curd until it turns smooth.
3. Add the paste to the curd and whisk well again.

Mildly spiced coated fish steam cooked in banana leaves. This dish is a very popular delicacy food from the Bengali cuisine. Highly flavourful and tasty acquiring the flavour of mustard seasoning.
Ingredients:
Fish 500 g
Cumin seeds 1ts
Green chilly 3 n
Whole garlic 5 n
Coriander leaves 2b
Mint leaves 1 b
Grated coconut 1 c
Salt
Sugar 1 pinch
Lemon juice 1 ts
Banana leaves 2 n
Directions:
Cumin seeds, green chilly, whole garlic, coriander leaves, mint leaves, grated coconut, salt, pinch of sugar, lemon juice, all these ingredients blend in a blender, make a paste.
Marinate the fish with made masala and put it in the banana leaves and fold it.
Place these on the steamer and cook for 12min or till cooked.

Ingredients
1 no (300 gms) boneless fillet of fish
1/2 cup sliced coconut
1 cup coriander leaves
Salt to taste
7-8 nos green chillies
1 tbsp garlic paste
2 tbsp lemon juice
1 tsp sugar
3-4 banana leaves
Water to adjust consistency
Method
- To make the chutney, blend together sliced coconut, coriander leaves, green chillies, garlic paste, sugar,lemon juice and salt mix it together.
- Add water if required & make it into a smooth paste.
- Cut the fish into thin long piece and divide into four pieces.
- Mix the fish with the green masala.
- Cut the banana leaves into little strips, make sure not to use spine of the leaf
- Wash the leaves and make sure the leaves are dry
- Heat the leaves lightly
- Place the marinated fish on the centre of the leaf
- Fold the leaf into an envelope
- In a sauce pan add water and keep a seive over it. Place the fish over the seive
- Steam the fish for 7-8 minutes
Patrani Macchi is ready to be served!
