2 tb Butter 1 c Brown sugar 1/2 c Ground California dried figs 1/2 c Ground nut meats 1/2 ts Vanilla Melt butter in heavy frying pan. Stir in brown sugar and cook until sugar is dissolved. Blend well. Add ground figs and nut meats and remove from fire. Add flavoring and drop by spoonfuls onto waxed paper. /DIRECTIONS 1) BEAT BUTTER IN MIXER ON MEDIUM SPEED 2) ADD SUGAR AND BEAT UNTIL FLUFFY 3) ADD EGGS. BLEND UNTIL INCORPORATED. 4) ADD FLOUR, BAKING SODA, BAKING POWDER AND SALT. I think butterscotch doesn't get all the love It deserves, That why I'm sharing this recipe. butterscotch can be sickly sweet, I think a crunchy pretzel bring balance and a crunchy element to this cookies that is just magical. The batch I made for this video, mysteriously dissapeared within a day or two, they're excellent. I hope you give this recipe a try. Apricot Almond Butterscotch Cookies
Apricot Almond Butterscotch Cookies Ingredients 7 Tablespoons Butter, Softened ⅓ cups Brown Sugar ⅓ cups Sugar 1 Egg ½ teaspoons Almond Extract 1-½ cup All-purpose Flour ½ teaspoons Baking Soda ½ teaspoons Salt 1 cup Dried Apricots, Chopped ¾ cups Slivered Almonds ½ cups Butterscotch Chips Preparation Instructions Preheat oven to 375 F. Prepare two cookie sheet pans by lining them with a Silpat mat or parchment paper.
In the bowl of your stand mixer add butter, brown sugar and white sugar. Mix until creamy. Add egg and mix until creamy. Add almond extract and continue to mix.
In a separate bowl combine flour, baking soda and salt. Add flour mixture into the mixing bowl and continue to mix. Stir in apricots, almonds and butterscotch chips.
Using two tablespoons scoop out mixture and drop onto cookie sheets spacing cookies about 2 inches apart. Bake for 9 to 11 minutes or until golden brown. Remove from oven, allow them to cool and enjoy!
