3 lg Ripe bananas 2 c Self-rising flour 1 c Sugar 1/2 c Oil 2 Eggs, lightly beaten 1/2 c Walnuts (optional) Mash the bananas with a fork. Stir the flour and sugar together and mix with the bananas, oil, and eggs. Fold in the nuts, if desired. Pour into a greased and floured loaf pan. Bake for 1 hour at 325F, until golden brown. MJ’s Banana Loaf 1⁄4 cup soft butter 1 cup white sugar 3 large ripe bananas (mashed) 2 eggs beaten well 1 1⁄2 cups flour 1⁄4 tsp. salt 1 tsp. baking soda 1⁄2 cup chopped walnuts (optional) Or/and 1⁄2 cup chocolate chips Cream butter with sugar. Add mashed bananas and beaten egg. Add flour, baking soda, salt, and chopped walnuts, or chocolate chips (if desired). Bake in a 9x5 loaf pan at 350 for about 1 hour and 10 minutes. (Hint – put parchment paper in the loaf pan and let the edges hang over the ends – this will make it easier to get the loaf out of the pan when it is just warm. Test with a long wooden toothpick at the 1 hour mark – if it comes out dry – take it out – if not – you know what to do! Happy Baking!!
