How To make Fiddle's Banana Bread
3 lg Ripe bananas
2 c Self-rising flour
1 c Sugar
1/2 c Oil
2 Eggs, lightly beaten
1/2 c Walnuts (optional)
Mash the bananas with a fork. Stir the flour and sugar together and mix with the bananas, oil, and eggs. Fold in the nuts, if desired. Pour into a greased and floured loaf pan. Bake for 1 hour at 325F, until golden brown. Serve cold with cream cheese. [ Fiddle's Restaurant in South Miami, Florida ]

Toaster Oven Banana Muffin
Here is another Toaster Oven Series that is simple and easy to make. I like bananas so I did a banana muffin with milk. This is a delicious and healthy for kids and the whole family.
Toaster Oven Banana Muffin Recipe
Ingredients
2 cup all-purpose flour
1 tbsp baking powder
1/3 cup sugar
1 cup milk
1 tbsp vinegar
2 tbsp cooking oil
2 medium-size lakatan, mashed
1 egg, beaten
Procedure
1. In a bowl sift all dry ingredients. Set Aside.
2. In another bowl mix together milk, vinegar, egg and oil. Pour the dry ingredient and the mashed banana and stir until the mixture is soft.
3. Spoon ¾ of the mixture into the greased muffin pans (make sure it will fit your toaster oven) or you can use puto mold like what I use here.
4. Preheat oven toaster for 12 minutes. Bake gradually (set timer for 5 minutes).
5. Insert toothpick into the center of the muffin to check if it is done. It should come out clean when done. If it still not done set timer for another 5 minutes. Continue doing this until muffin is done.
6. When done cool pan in a rack for a couple minutes before removing muffin from the pan.
7. With this method you can be sure that it won’t burn what you’re baking in the toaster oven, since toaster oven bake faster than a conventional oven.
*Make sure your toaster oven selector is set to bake from top to bottom. Always check what
Your baking in the toaster oven a bit early.
Yield: 10 muffins
