OMG! Italian Style Rich lamb stew with honey and caramelised onion
The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

ملعقة صغيرة من بذور الكزبرة
بصل مقطع (150 جرام)
كيلوغرام واحد من لحم الخروف (1000 جرام).
ثلاثة أكواب من أرز بسمتي طويل الحبة
ملح ونصف ملعقة صغيرة كل من الفلفل الأسود والكركم
تقلى 4 حبات بطاطس (500 جرام)
تقلى حبتان باذنجان (600 جرام).
تقلى حبتان من البصل ، حوالى (300 جرام)
ورق الزبدة
نصف كوب حمص معلب
نصف ملعقة صغيرة كل من القرفة والهيل والقرنفل والفلفل الأسود والكركم
يُزين بالبقدونس
تعليمات خطوة بخطوة لطهي الوصفة
أضيفي القليل من الزيت في وعاء

ملعقة صغيرة من بذور الكزبرة
بصل مقطع (150 جرام)
يُطهى كل شيء على نار متوسطة حتى يتكرمل البصل
ثم نضيف كيلو لحم ضأن (1000 جرام) مع العظام
يضاف الملح ونصف ملعقة صغيرة من الفلفل الأسود والكركم ويخلط مع اللحم
ثم غطي اللحم بالماء واتركيه يطهى على نار متوسطة لمدة ساعة ونصف
أثناء طهي اللحم ، ابدأ في تحضير الخضار المقلية
تقلى 4 حبات بطاطس (500 جرام)
تقلى حبتان باذنجان (600 جرام).
تقلى حبتين من البصل حوالى (300 جرام).
اغسلي ثلاثة أكواب من أرز بسمتي طويل الحبة وانقعيها في الماء لمدة 30 دقيقة
بمجرد مرور الساعة والنصف ، أخرجي اللحم من القدر وصفِّي المرق
ضعي قطعة من ورق الزبدة في قاع الإناء
أضيفي اللحم أولاً
ثم نضيف البطاطس
ثم الباذنجان
أضيفي نصف كوب من الحمص المعلب
يضاف البصل المقلي
صفي الأرز من الماء واسكبيه في القدر
نضيف البهارات التالية:
نصف ملعقة صغيرة كل من القرفة والهيل والقرنفل والفلفل الأسود والكركم
نصف ملعقة صغيرة ملح
أضيفي المرق
اطبخي على نار عالية حتى تقل كمية الماء
ثم ، على نار خفيفة لمدة 30 دقيقة
أخرجيها من سطح الموقد واقلبيها على صينية التقديم
اتركيها لمدة 5 دقائق قبل إزالة الوعاء ببطء
يُزين بالبقدونس

Cooking oil
Cinnamon sticks

Cardamom and cloves
One tsp of coriander seeds
Chopped onions (150 grams)
One kilogram lamb meat (1000 grams)
Three cups of long grain basmati rice
Salt taste and half a tsp each of black pepper and turmeric
Fry 4 potatoes, about (500 grams)
Fry 2 eggplants, about (600 grams)
Fry two onions, about (300 grams) parchment paper
Half cup of canned chickpeas
A half of a tsp each of cinnamon, cardamom, cloves, black pepper, and turmeric
Garnish with parsleys
Step by step instructions for cooking the recipe
In a pot add a little bit cooking oil
Cinnamon sticks
Bay leaves
Cardamom and cloves
One tsp of coriander seeds
Chopped onions (150 grams)
Cook everything over medium heat until the onion is caramelized
Then, add one kilogram lamb meat (1000 grams) with the bones
Add salt taste and half a tsp each of black pepper and turmeric, and mix the with the meat
Then cover the meat with water and let it cook on medium heat for one and a half hours
While the meat is cooking start preparing the fried vegetables
Fry 4 potatoes, about (500 grams)
Fry 2 eggplants, about (600 grams)
Fry two onions, about (300 grams)
Wash three cups of long grain basmati rice and soak it in water for 30 minutes
Once the one hour and a half have past, take the meat out of the pot and strain the broth
Put a piece of parchment paper in the bottom of the pot
Add the meat first
Then add the potatoes
Then the eggplant
Add a half cup of canned chickpeas
Add the fried onions
Drain the water from the rice and pour it into the pot
Add the following spices:
A half of a tsp each of cinnamon, cardamom, cloves, black pepper, and turmeric
One and half of a tsp of salt
Add the broth
Cook on high heat until the amount of water decreases
Then, over low heat for 30 minutes
Take it out of the stove top and flip it onto a serving tray
Let it sit for 5 minutes before slowly removing the pot
Garnish with parsley

One Pot Lentil and Rice Recipe Inspired by Lebanese Mujadara ???????? Easy Plant-Based Recipes for Vegans
This recipe is inspired by Lebanese Mujadara and a combination of a few Mediterranean recipes (however, I have added Ginger because of its various health benefits, especially with digestion).

▶️ RECIPE INGREDIENTS: (4 to 5 servings)
1 Cup / 200g BROWN LENTILS ONLY (washed and soaked in water for at least 4 to 6 hours (or overnight) until the lentils are very tender)
1 Cup /200g BASMATI Rice (thoroughly washed/soaked in water for 20 minutes)
3 Cup / 400g Chopped Onions - 2 medium size onions (430g with skin on)
1 Tablespoon ginger (very finely chopped)
1 Tablespoon garlic (very finely chopped)
3/4 Cup Strained Tomatoes / Passata / Tomato Puree
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 to 1/2 Teaspoon Cayenne Pepper OR to taste (Optional)
Salt to taste (I added total 1+1/2 teaspoon of pink Himalayan salt)
2 Cups / 475ml Water
Garnish:
3/4 cup / 70g Parsley (finely chopped)
Freshly Ground Black Pepper to taste (I added 1/2 teaspoon)
Lemon or Lime juice to taste (I added 1+1/2 tablespoon lemon juice, I like it a bit sour)
Extra Virgin Olive oil (I added 2 tablespoons of organic cold-pressed olive oil)
▶️ METHOD:
✅???? USE A WIDER POT TO COOK THIS DISH (this will cook the rice more evenly and prevent it from getting mushy).
Wash and soak the brown lentils for at least 4 to 6 hours (or overnight) until the lentils are very tender. Thoroughly wash the rice until the water runs clear to get rid of any impurities/gunk (it's an important step so do not skip it). Soak for 20 minutes.
Heat a pan, add cooking oil, onion and 1/2 tsp salt. Adding salt to the onions will help release water and help it cook faster. Fry the onion on medium-high heat until it starts to caramelize. Once caramelized, reduce the heat to medium to medium-low heat (depending on the heat of your stove) and add finely chopped ginger and garlic. Fry until onions are nicely browned (be careful not to burn the onion).
Once the onion is caramelized, add the strained tomatoes/passata and spices. Give it a good mix. Add the soaked lentil and rice, along with salt and water. Cover and bring to a vigorous boil. Once it starts boiling, reduce the heat to low and cook for about 25 to 30 minutes.
Uncover and check to see if the rice and lentils are cooked (it should be cooked by now, if its not, cover and cook it for a bit longer). Now continue to cook UNCOVER for another 1 to 2 minutes on low heat to get rid of any excess moisture. Turn off the heat.
Add parsley, lemon juice, black pepper and drizzle of olive oil. Mix very gently, the rice is delicate at this point and we don't want to break it. Cover and let it sit for 5 minutes before serving (for flavors to blend).
Stores well in the fridge for 3 to 4 days. It's perfect for meal planning.
▶️ IMPORTANT TIPS:
???? Soak lentils until they are very tender. The soaking time depends on the quality of the lentils. Some brown lentils are drier than the others and therefore need more soaking time
???? How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer
???? It's really important that the lentils soak well. The reason is to match the cooking time of lentils with the rice

Turkish Eggplant Kebab Recipe | Easy Baked Eggplant Shishkebab By Aysenur Altan
Learn how to make kebab with eggplant! Eggplant kebab is one the famous Turkish dishes along with popular other kinds of kebabs. It is mostly grilled in Turkish restaurants but you can easily make it at home in the oven. This way is sure more healthy and easy to make.
Ingredients for the Eggplant Kebab:
1 kg of medium size and (if you can find)
same diameter eggplants , try to choose ones that little softer inside when touched
1 teaspoon of salt to take out the juices
For the kebab:
500gr. ground beef or lamb or half of each (better if it has some fat in it which will give more flavor)
2 medium size onion
1 TSP each (IN THE VİDEO I MİSTAKELY said 1 TBSP PLEASE FORGET THAT:) of black pepper, salt and ground red pepper
3 tbsp water
5-6 medium size tomatoes, green peppers, 2 small onions
For the tomato sauce: 2 tbsp tomato paste, 3 tbsp olive oil, about 2 + 1/2 cups boiled water (the sauce water should cover more than half way up the kebabs and eggplants)
