Restaurant-style Eggplant with shrimp recipe. This recipe is inspired by Thai restaurant dishes.
Ingredients:
1 big eggplant
15 counts of shrimp
salt to taste
vinegar
pepper
3 tbsp soy sauce
2 tbsp thick soy sauce
2 tbsp brown sugar
scallions/green onions
that green chillis (according to your spice level)
6 tbsp corn starch powder

Eggplant/Aubergine/Brinjal : 2 big
Olive oil: 4 TBSP
Salt : 1 tsp divided
Onion ( medium) : 1
Ginger-garlic paste : 1 TBSP
Tomato pulp: 500 g or 1 container
Black pepper: 1tsp divided
Italian seasoning : 1 tsp divided
Bulgarian cheese: 400 g
Heavy cream: 1 cup or less
Spring onion: 3-4 stalks
Coriander: ¼ th cup
Parsley: ¼ th cup
Mozzarella cheese: 200 g
Parmesan cheese : 1-2 TBSP

This Eggplant Casserole Recipe is made by cooking down cubed and peeled eggplant and mixing with ground meat, shrimp, crawfish or crabmeat. We serve it i s a side dish or as a party dip on crackers.
Eggplant Casserole Recipe Ingredients
4 Eggplants
2 cups Cajun Trinity (or frozen seasoning blend)
1 stick of butter or 2-3 tablespoons canola oil
1/2 pound ground round
1/2 pound ground pork (or one pound of either one)
Tony’s Creole Seasoning
2 cups bread crumbs
1-2 cups chicken stock
Eggplant Casserole Recipe Cooking Directions
Preheat oven to 375 degrees.
Spray a casserole dish with spray oil.
First start by peeling the eggplant.
Cut in half and then cut into strips. Then, cut crosswise into 1 inch cubes.
Heat in a large pot about 2 cups chicken stock.
Place in the pot the cubed eggplant.
Season with salt and a sprinkle of Tony’s Creole Seasoning.
Let simmer for 15 minutes.
Stir occasionally.
Once tender, mash with a whisk or a potato masher to get the lumpy pieces.
Meanwhile, heat 1 stick of butter on medium heat in a deep skillet.
Cook the ground round beef and ground pork by chopping up with a flat edged wooden spatula.
The meat should all be brown and no pink.
Pour the meat mixture into the eggplant pot. Stir well.
Then, add in 1 cup of bread crumbs.
Stir to mix all ingredients evenly.
Add seasoning if needed.
Pour into casserole dish and sprinkle with another cup of bread crumbs.
An optional step would be to also sprinkle on Parmesan cheese.
Place in the oven and bake for 30 minutes.
Eggplant Casserole Recipe Serving Suggestions
Serve as a side dish in a small bowl or serve with a good butter cracker or whole wheat cracker for a party.
Eggplant Casserole Recipe Other Options
Replace ground meat with boiled or sautéed shrimp, crawfish, or crab meat.
The seafood really makes for a tasty party dip.

SHRIMP & EGGPLANT Casserole | Grandma Bessie's House
Eggplant is often eaten as a summertime meal. However, I wanted to share our SHRIMP & EGGPLANT CASSEROLE with the GBH family today. This is a traditional dish in any Creole and Cajun kitchen. In addition, this casserole combines a multitude of flavors in one easy dish. Also, you can substitute eggplant with zucchini, summer squash or mirlitons.

SHRIMP & EGGPLANT CASSEROLE
1 pound shrimp, peeled, tails removed & deveined
2 small-to-medium eggplants, peeled & cut into cubes
nonstick spray
2 Tbsp olive oil
1 - 2 large carrots, sliced (Make sure carrot slices are similar in size.)
3 small Russet potatoes, peeled & diced
1 bell pepper, seeds removed & diced
1 onion, roughly chopped
2 large garlic cloves, finely chopped
1 large tomato, seeds removed & diced
1/2 tsp fresh thyme, plus more for garnish
1 cup panko breadcrumbs, divided (3/4 cup for casserole, 1/4 cup for topping)
1 egg, whipped or beaten
1/4 cup chicken broth
1/4 tsp granulated garlic
1/4 tsp granulated onion
1/4 tsp celery seed
1/4 tsp freshly ground black pepper
1/2 tsp salt
1/2 tsp Creole seasoning
1 Tbsp cold unsalted butter, diced
1. Heat oven to 350°F. Add water to a pot and bring to a boil. Add eggplant to pot. Cook until tender, about 5 minutes. With a slotted spoon, remove eggplant from pot and place into a large bowl. Set aside. Keep water boiling in pot.
2. Add carrots to pot. Cook until tender, 8 - 10 minutes. Remove from pot and set aside. Check water level in pot. If needed, add more water and bring to a boil. Add potatoes to pot and cook until tender, 10 minutes. Remove from pot and add potatoes to the bowl with the eggplant. Mash potatoes with eggplant until fully combined. Set aside.
3. Place a different large pot over medium heat. Spray it with nonstick spray and coat with olive oil. Add bell peppers and onions. Stir. Cook until softened, about 5 minutes. Add fresh thyme and combine. Add garlic, carrots and shrimp. Reduce heat to low and combine. Cook shrimp until color starts to change, 2 - 4 minutes. Add mashed eggplant and potatoes to the pot. Add tomatoes and breadcrumbs.
4. Add egg to the pot. Add milk and chicken broth. Stir until combined. Add dried spices and combine. Spray a casserole dish with nonstick spray. Add shrimp-eggplant mixture. Top with remaining breadcrumbs and diced butter. Bake in oven until golden, 30 - 40 minutes. Garnish with fresh thyme and serve while hot.

1 LB peeled and cleaned shrimp
2 eggplants, cubed and boiled
1 onion, diced
1 bell pepper, diced
3 garlic cloves, minced
1 stick butter, melted
2/3 C bread crumbs + more if needed
salt, black pepper, cayenne to taste
Boil eggplant until tender.
Saute the onion, bell pepper, and garlic in butter and a little oil until translucent. Add the eggplant to it and smash.
Add the shrimp and cook for 20 minutes.
Add a bit of bread crumbs if too much liquid.
Add 2 tbs of butter.
Add the mixture to a buttered casserole dish.
Combine rest of butter and 2/3
C bread crumbs and combine well.
Spoon over the casserole and bake at 350° for 35 minutes or until lightly browned.
