Professional Baker Teaches You How To Make CHEESECAKE!
Chef Anna Olson takes you step by step through her amazing New York cheesecake recipe.
This makes a 1 9-inch cheesecake.
CRUST INGREDIENTS
- 1 cup (225 g) graham cracker crumbs
- 2 Tbsp (25 g) sugar
- ¼ cup (60 g) unsalted butter, melted, plus extra for greasing the pan
CHEESECAKE INGREDIENTS:
- 4 pkg 250 gram packages of cream cheese, at room temperature
- 1 1/4 cup + 2 Tbsp (275 g) sugar
- 3 Tbsp (22 g) cornstarch
- 2 tsp (10 ml) vanilla extract
- 2 tsp (4 g) finely grated lemon zest
- 3 large whole eggs
- 1 large egg yolk
- 1 ½ cup (375 ml) sour cream (not low-fat), divided
- 2 tsp (10 ml) lemon juice
CRUST DIRECTIONS:
1. Preheat the oven to 350ºF (176 C).
2. For the crust, stir the graham crumbs, sugar and melted butter until evenly combined and press this into the bottom of an ungreased 9-inch springform pan.
3. Bake this for 10 minutes, then cool. Brush the sides of the pan with a little melted butter.
CHEESECAKE RIRECTIONS:
1. For the cheesecake, increase the oven temperature to 400ºF (205 C).
2. Beat the cream cheese until light and fluffy. Add the 1 ¼ cups of sugar a little at a time, and scraping the sides and bottom of the bowl often.
3. Beat in the cornstarch, vanilla and lemon zest.
4. Beat in the eggs one at a time, on a lower speed, and scraping after each addition, then beat in the yolk.
5. Still on low speed, beat in ¾ cup of sour cream. Scrape this over the cooled crust.
6. Bake the cheesecake for 10 minutes at 400ºF (205 C) and then reduce the oven temperature to 225ºF (107 C) and bake for 25 more minutes. Turn off the oven, and leave the cheesecake in for an hour, cracking the oven door after 30 minutes. While the cheesecake is baking, prepare the sour cream layer.
7. Stir the remaining ¾ cup of sour cream with the remaining 2 Tbsp of sugar and the lemon juice. Spread this over the top of the cheesecake as soon as it has come out of the oven.
8. Allow the cheesecake to cool completely to room temperature, then carefully run a spatula around the outside of the cheesecake to loosen it from the pan, then chill the cheesecake for at least 6 hours before slicing and serving. The cheesecake will keep, refrigerated, for up to 4 days.

INGREDIENTS
FOR THE CRUST
2 c. all-purpose flour
1/2 c. firmly packed light brown sugar
1/2 tsp. ground cinnamon
pinch of kosher salt
1 c. unsalted butter, softened
FOR THE CHEESECAKE
3 8-oz. blocks cream cheese, softened
3/4 c. sugar, plus 2 tablespoons, divided
3 large eggs
1 tsp. pure vanilla extract
pinch of kosher salt
3 granny smith apples, peeled, cored and diced
1/2 tsp. ground cinnamon
FOR THE STREUSEL TOPPING
3/4 c. firmly packed brown sugar
1/4 c. granulated sugar
1/2 c. all-purpose flour
1/2 c. old-fashioned oats
1/2 c. butter, softened
1/2 tsp. cinnamon
Caramel, for serving
DIRECTIONS
1. Preheat oven to 350°. Line a 9-x-13” baking pan with parchment paper.
2. Make crust: In a large bowl, whisk together flour, brown sugar, cinnamon and salt. Add butter and use your hands, or a pastry cutter, to cut the butter into the flour mixture until it’s crumbly and moist. Press into prepared pan and set aside.
3. Make filling: In a large bowl, beat cream cheese and 3/4 cup sugar until light and fluff. Add eggs, one at a time, beating well between each addition. Mix in vanilla and salt. Pour over the crust.
4. In a small bowl, toss together apples, 2 tablespoons sugar and cinnamon. Set aside.
5. Make streusel topping: In a medium bowl, whisk together brown sugar, sugar, flour and oats, then cut in butter with a fork or pastry cutter.
6. Scatter apples on top of the cheesecake mixture, then top with oat mixture.
7. Bake until the cheesecake is only slightly jiggly in the center, about 55 minutes. Let cool completely, then refrigerate for at least 2 hours.
8. Before serving, drizzle with caramel sauce and slice into squares.

Ingredients:
For the crust:
200g (7oz) biscuits
1/3 cup + 1 tsp (80g) butter, melted
For the filling:
300g (10.5oz) Blueberries, fresh or frozen
2 tablespoons (25g) Sugar
2 cups (450g) Cream cheese
2/3 cup (160ml) Heavy cream
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup (125g) Powdered sugar or less if your blueberries are very sweet
10g Gelatin powder
50ml Cold water
Topping:
7g gelatin powder + 35ml cold water
180g (6.5oz) blueberries, fresh or frozen
2 tablespoons (25g) sugar
70ml water
Directions:
1. In a food processor or a Ziploc bag crush the biscuits into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. In a small saucepan, heat blueberries, lemon juice and sugar. until sugar is dissolves and the berries softened. Blend until smooth. Let cool.
3. In a small bowl stir gelatin powder and water. Let bloom for 10 minutes.
4. In a large bowl beat cream cheese until soft and smooth, add heavy cream, vanilla extract and beat to soft peaks. Add chilled blueberry mixture and mix until smooth.
5. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined.
6. Pour into the springform pan, spread evenly. Freeze for 1 hour while making the topping.
7. Blueberry jelly: In a small bowl stir gelatin powder and water. Let bloom for 10 minutes. In a small sauce pan place 180g blueberries, water and sugar. Cook over medium-high heat, stirring occasionally until the sugar is dissolves. Remove from heat, blend until smoot. Add bloomed gelatin and stir until the gelatin is melted and incorporated. Let cool to room temperature and pour over the cake.
8. Refrigerate the cake overnight.

Campfire Devil's Tooth Cheesecake/Dutch Oven Cooking
This Cheesecake is rich and chocolatey! It's really not that difficult to make in a Dutch oven at camp, but does take some time to cook.
Here is the recipe:
Crust
1/4 cup butter melted
1 pkg Nabisco Chocolate wafers or similar cookies
Filling
16 oz cream cheese softened
1 cup sugar
16 oz Ricotta cheese softened
1/2 cup sour cream
6 eggs
1 1/2 tsp vanilla
12 oz choc chips
1/4 cup butter
1/2 cup heavy cream
1 1/2 tsp almond extract
For crust, crumble cookies and stir in melted butter. Press into bottom of Dutch oven and about an inch up the sides.
For filling, mix cream cheese, sugar, Ricotta cheese, sour cream and eggs until smooth. Set aside.
In saucepan, melt choc chips, butter, cream and almond extract until smooth. Add about 1/3 of the cheesecake mixture into the chocolate and stir until blended. Pour over crust in Dutch oven.
Add vanilla to rest of cheesecake mixture and gently pour over chocolate layer to avoid mixing.
Place Dutch oven over coals and add coals to top. Not too much heat on bottom to avoid burning crust. You will need to replenish coals on top as it bakes.
Can take anywhere from 1.25 hours up to 2 hours depending on weather, coals, etc.
Let cool completely for best texture and flavor. It really does change quite a bit once cooled.
Enjoy with morning coffee the next day!
