This classic dessert comes to you directly from the Lancaster, Pa. Amish country. Some people may know it as the Vanilla Breakfast Cake. It got
its name because it was funny....it's a hybrid between a pie and a cake so people weren't sure what the funny dessert was! It's a combination of a cake in a pie crust with a yummy chocolate syrup on the bottom and a crispy topping. I am listing the recipe below if you want to try making it. Enjoy!
THE FUNNY CAKE / PIE
INGREDIENTS:
1 1/2 cups sugar
1/2 cup vegetable oil
2 eggs
2 cups flour
2 tsp. baking powder
1 cup whole milk
1 tsp. vanilla extract
2 unbaked pie shells

1 cup sugar
1/2 cup unsweetened cocoa powder
1 cup hot water
DIRECTIONS:
Preheat oven to 350 degrees.
Have your unbaked pie shells ready in their pie plates.
In a large mixing bowl beat the sugar, oil and eggs until well blended.
Slowly add the flour, baking powder, milk and vanilla. Beat on medium
speed for about 2 minutes.
Pour into the unbaked pie shells.
Now in a small bowl mix together the sugar, cocoa and hot water.
Pour over the top of the cake batter. Swirl around the top as you pour it in.
Bake at 350 degrees for 1 hour.
Delicious served warm with vanilla ice cream or whipped cream.

INGREDIENTS:
--1/2 cup butter
--1 1/2 cups sugar
--1/2 teaspoon vanilla
--2 cups flour
--1/2 teaspoon baking soda
DIRECTIONS:
Emphasis added: No other wet ingredients like milk are added to this recipe.
Combine ingredients in a large bowl. Mix thoroughly, by hand if necessary, to get all of the flour off of the bottom of the bowl.
Preheat oven to 350 degrees. Place rounded teaspoons of the thick batter onto a greased cookie sheet. Bake for 8-10 minutes until lightly brown around the edges. Remove from heat. Sprinkle with colored sugar or cinnamon sugar. Cool on pieces of waxed paper.

This easy, light fun pie is a no bake fun option, and green besides making it great for St. Patrick's Day or just to make someone green with envy!
PISTACHIO PIE
The Graham Cracker Crust:
INGREDIENTS
1 ½ cups graham cracker crumbs (or 10 graham cracker sheets pulverized to crumbs in a food processor)
2 Tablespoons sugar
1 Tablespoons brown sugar packed
7 Tablespoons butter melted
INSTRUCTIONS
Pulverize graham crackers in food processor until finely ground into crumbs (skip this step if starting with graham cracker crumbs).
Combine graham cracker crumbs and sugars in a medium-sized bowl. Add melted butter and use a fork to combine ingredients well.
Pour mixture into pie or springform pan. Use the (clean!) bottom of a measuring cup to firmly pack crumbs into the bottom of the pan and (if using a pie pan) gently press up the sides. Use your fingers to pack crumbs tightly into the sides of the pie pan.
If the crust needs to be pre-baked, bake on 375F for 7-10 minutes. If using this crust as part of a different recipe, bake according to your recipe's instructions. If this crust is for a no-bake recipe, refrigerate or freeze for 10-20 minutes before filling.
PIE FILLING:
Ingredients
2 3.4oz Small Boxes of Pistachio Pudding Mix
2 cups Milk
4 oz Cream Cheese
8 oz Whipped Topping
1 6-9oz Graham Cracker Pie Crust
Additional Whipped Topping, Cherries & Crushed Pistachios for Topping
Instructions
Whip cream cheese using an electric mixer for about 1 minute. Add in milk and pudding mixes. Mix 2-3 minutes, until mixture thickens.
Add in whipped topping and stir to combine.
Pour mixture into pie crust. Cover & refrigerate at least 1 hour.
Top with additional whipped topping, cherries and crushed pistachios, if desired.

This Easter I made a Dutch Cheesecake - MonChoutaart.
Ingredients:
• 250 gram biscuits of own choice (for example bastogne)
• 100 gram Margarine
• 200 gram Cream Cheese
• 500 ml Whipped Cream
• 2 bags klopfix (Thickener for Whipped Cream)
• 8 gram vanilla sugar (1 bag)
• 100 gram white Caster Sugar
• Easter Themed decorations (for example Chocolates)

Raisin Filled Cookies -- German/PA Dutch Family Recipe
Mike's Mom and I make my great aunt's wonderful, soft, doughy PA Dutch/German raisin filled cookies, although you can use cherry or blueberry or other fruit fillings as you please! A wonderful treat!
RAISIN FILLED COOKIES
INGREDIENTS
1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg or cinnamon (I used cinnamon)
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins
DIRECTIONS
In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle.
For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool.
On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top.
Place 2 in. apart on ungreased baking sheets.(I use parchment paper instead.) Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool. Yield: about 3-1/2 dozen.
