There are few breakfast/brunch items as delicious, and visually impressive as the Dutch Baby, and when you consider how fast and simple they are to make, you have to wonder why they aren’t on every restaurant menu. Maybe one day, but for now we’ll just make them at home, preferably with a handful of sweet blueberries tossed in.

***RECIPE***
eggs (one per person, I do 2-3 in a 10 in / 25 cm pan)
milk (1/3 cup, 80mL per egg)
flour (1/3 cup, 40g per egg, and I like to replace up to half my flour with starch)
salt (a pinch per egg)
sugar (1 teaspoon per egg, sweet or savory)
vanilla (only for sweet)
spreadable cheese, like ricotta/brie/mascarpone (OPTIONAL 1 tablespoon per egg, improves the taste but makes it not puff as much)
butter
toppings (lemon juice and powdered sugar is nice for sweet, eggs/salami/onion is nice for savory)
If possible, warm the eggs and the milk before mixing. Combine the eggs, salt, sugar and vanilla (if using) in a mixing bowl and whisk until frothy. Whisk in the flour until smooth, then whisk in the milk. Or you could just dump all of that in the blender at once. Let the batter sit for at least 20 minutes before baking.
Put your pan (nonstick or cast iron) in the oven and get the oven heating to 425ºF/220ºC. When it's all the way hot, take the pan out of the oven and melt in a thick film of butter. Pour in the batter and return the pan to the oven. Bake until puffy and golden (mine took 20 minutes).
If you want to cook some eggs on top like I do in the video, bake until almost done, pull it out, put on your eggs/seasonings/onions/salami/whatever and return to the pan for a few minutes until the yolk is as firm as you want it.
Transfer to a cooling rack and let it steam out before you eat.
Homemade Dutch Baby Recipe
Dutch Baby Pancake Recipe is a delicious light and fluffy baked pancake that is served up with berries, powdered sugar, and whipped cream.
The Dutch Baby is an Americanized pancake that really seems to be invented by a restaurant in Seattle, Washington during the early to the mid-20th century. Often times it’s confused with a German pancake or even a Dutch Pancake from the Netherlands known as Deutsches pfannkuchen, which are really thin and closer to crepes than they are American pancakes.
A Dutch baby is very similar in batter and preparation to that of a popover or Yorkshire pudding. It is a very heavy egg-based recipe that is cooked in a cast-iron skillet in the oven until it crawls up the sides of the pan and becomes light and fluffy.

• ¾ cup whole milk
• 4 large eggs
• 2 tablespoons melted unsalted butter
• 2/3 cup all-purpose flour
• ½ teaspoon sea salt
• 1 ½ teaspoons vanilla extract
• 2 tablespoons unsalted butter

Procedures:
1. Add the 10” Milo skillet to an oven and preheat to 400°.
2. In the meantime, add the milk, eggs, melted butter, four, salt, and vanilla to a blender and blend on high for 20 to 30 seconds or until very smooth. Set it aside.
3. Remove the skillet once it has been preheated and add in the 2 tablespoons of butter and heat until it is melted.
4. Immediately pour in the batter from the blender and bake at 400° for 20 minutes or until browned, firm, and the batter has crawled up the sides of the pan.
5. Remove the Dutch baby from the oven and garnish with fresh berries, whipped cream, and powdered sugar.

Make-Ahead: This recipe is meant to be eaten as soon as it is done cooking
How to Reheat: Place the Dutch baby on a cookie sheet tray lined with parchment paper and cooked at 350° until warmed, about 3-5 minutes. You can also reheat in the microwave.
How to Store: Cover and keep in the refrigerator for up to 3 days. These will not freeze well.
You can substitute for lower-fat milk.
Feel free to substitute with bread flour.
Once the pan is removed from the oven it will be extremely hot and will melt the butter in seconds.

1/2 cup whole milk
2 large eggs
1/2 cup all-purpose flour
4 tbsp sugar
1 large apple, peeled, cored, and sliced thinly
1/3 cup brown sugar
1 pinch cinnamon
2 tbsp butter
powdered sugar
Instructions for making apple Dutch baby:
- The batter is super simple, just add milk, eggs, all-purpose flour, white sugar, and kosher salt to a blender and mix for a few seconds until combined
- The consistency should be quite thin like crepe batter
- Grab your favourite kind of apple and slice it very thinly
- Now add white sugar, brown sugar, and cinnamon
- Mix so the apples are fully coated in the sugar mixture
- Now heat a cast iron skillet over medium high heat and add 2 tbsp of butter
- Once the butter is melted, pour in the apples and cook until they’re soft and the sugar has caramelized
- Remove from the heat then pour the batter evenly over the apples
- Now immediately put the pan in a preheated 425 degree oven and bake for 20-30 minutes
- The batter should puff up as it cooks
- Once it’s nicely puffed and golden brown, remove from the oven and sprinkle with powdered sugar then serve warm for optimal tastiness
