This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream – YUM!
HOW TO WHIP EGGS:
INGREDIENTS:
Sponge Cake
- ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
- ½ cup (60 g) cornstarch
- ¼ tsp baking powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
- ½ cup (100 g) white granulated sugar
- ½ cup (110 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating - sliced in half

The best way to describe them is to say they are a cross between a vanilla flavored white butter cake and a cream scone. I like to frost them with this delicious buttery sweet Confectioners Frosting and colored sprinkles are entirely optional.

Almond Slice (Optional)
Method:
1. Take 4 eggs and separate the yolk and the whites. Keep them aside.
2. Seive maida, baking powder, baking soda, salt into a bowl.
3. To a separate bowl, add powdered sugar and ghee. Beat the sugar and ghee until creamy texture.
4. To this add vanilla essence and mix it.
5. Now add one yolk at a time and incorporate it slowly.
6. To this add the flour mixture slowly.
7. To another bowl, add the egg whites, add sugar and beat it until it gives soft peaks.
8. Add the whisked egg whites litte by little and fold the batter. Do not overmix this.
9. Once all the all the egg whites are mix it, transfer it to a lined cake tin.
10. Preheat the oven at 180C for 15 mins.
11. Sprinkle some sliced almonds. Place the cake tin in the oven.
12. Bake the cake at 180C for 1 hour.
13. Remove the cake and let it cool.
14. Carefully remove the butter paper.
15. Delicious ghee cake is ready.

A very Happy Women's Day to all the incredible women out there! To celebrate all the special women in my life, I made a Caramelized Almond Vanilla Cake in my @MorphyRichardsIndiaSmartIdeas 52 RCSS oven with my favourite woman, my mom.
This cake has an incredible vanilla sponge, a caramel and almond layer on top, and a custard filling in between. You can also bake away to celebrate women's day and #ThankHerYourWay.

Ingredients:
1 + 1/2 cup (180gms) maida
¼tsp (1gm) cinnamon powder
1 + ½ tbsp (27gms) baking powder
¾ cup (150gms) sugar
½ cup (120ml) vegetable oil
1tsp (5ml) vanilla
3 eggs or 3/4 cups curd or yogurt
1/2 cup (120ml) milk
For caramel
½ cup (100gms) granulated sugar
3 tbsp (45ml) water
6 tbsp (75ml) fresh cream (warm)
