1 ts Soda
1 c Boiling water
1 1/2 c All-purpose flour
1 ts Baking powder
1/3 ts Salt
1 c Sugar
1 Egg; beaten
1 tb Butter or margarine; melted
1/2 c Nuts; chopped
DATE TOPPING:
1 c Sugar
2/3 c Boiling water
ds Salt 1 c Pitted dates; chopped
1/2 c Nuts; chopped
Pit and cut up dates; add soda dissolved in boiling water and let stand In bowl, combine flour, baking powder, salt and sugar; add to dates along with egg and butter. Mix well; stir in nuts. Turn into greased 80inch baking pan. Bake in 350~F oven for 55 minutes. Topping: Combine sugar, boiling water, salt, pitted dates and nuts. Pour over cake as soon as it comes from over. Let cake cool in pan. Serve warm or cold, topped with whipped cream, if desired. Makes 9 servings. -----

I am sharing my family recipe for this rich cake that we make on special occasions.
I have coated the cake with chocolate ganache. You may not like the idea of Date and Walnut Cake with chocolate until you try it. It's just unique and simply irresistible.
Ingredients for the Dates Cake
Dates - 500 grams (soak for 10 min in 1 cup hot water and add 1 tsp baking soda)
Walnuts (chopped) - 100 grams
Powdered Sugar - 150 - 200 grams
Butter - 150 grams
Eggs - 03
All-purpose flour/Maida - 200 grams
Vanilla essence - 1 tsp
Add 1/2 tsp salt if using unsalted butter
For Chocolate Ganache (pouring consistency)
100 grams - Cooking chocolate
100 grams - Fresh cream
(Microwave for 10 to 15 seconds)

Delicious Dates & Walnut Moist Cake Recipe
Red Dates & Walnut Moist Cake – This cake is super moist, amazingly. The fragrant is phenomenal as you can smell it from the oven and when the cake is out, the room is filled with such pleasant smell. I got hungry and couldn’t wait to dive in. Love the texture of the cake. The dates made it a little chewy and crunchy at the same time with the walnuts. I love coffee and adding into the cake is just nice for me but you can definitely leave it out by just adding hot water. I made the eggless version as well. Honestly I can’t tell the difference. Ingredients:
I used a loaf pan of 20 x 10 x 7.5cm
250g [2 cups] red dates
85g [1 cup] walnuts
60g [¼ cup] butter
6g [1 tbsp] espresso coffee OR 6g [2 tsp] instant coffee (optional)
120g [½ cup] hot water
4g [1 tsp] baking soda
150g [¾ cup] castor sugar
1 large egg OR 60g [¼ cup] plain yogurt
225g [1¾ cup + 1 tbsp] self-raising flour
¼ tsp salt
Instruction:
1. Preheat oven at 170°C/340°F.
2. Lightly chop the dates and walnuts. Set them aside.
3. Brew some espresso coffee with hot water. You can also use instant coffee powder for your convenience or preference. You can also omit the coffee totally if you don’t desire coffee.
4. In a large mixing bowl, add in the chopped dates, baking soda, butter and sugar. Add in the hot water espresso mixture. Mix until the butter is melted. Set aside for cooling.
5. In another bowl, sift the flour and salt.
6. Back to the dates and coffee mixture. The mixture should be cooled by now. Add 1 egg into it. Mix until well combined.
Egg substitute: add in the plain yogurt instead. Mix until well combined.
7. Add in the sift ingredients in 2 batches. Mix until combined, do not over mix.
8. Add in the walnuts.
9. Transfer the batter into the prepared pan, greased and lined with parchment paper.
10. With a spatula, spread the batter evenly. Add some chopped walnuts on top.
11. Bake in preheated oven at 170°C/340°F for 50-60 minutes. If you notice the top start to crack, you may turn down the temperature to 160°C/320°F (depending on individual oven).
12. Remove cake from the pan, let it cool completely before slicing.

To Make Date Cake
Pitted Dates - 10 Nos
Hot Water
Maida - 1 Cup
Salt
Baking Soda - 1/4 Tsp
Baking Powder - 1 Tsp
Brown Sugar - 3/4 Cup
Unsalted Butter - 4 Tbsp
Egg. -1 No.
Vanilla Essence - 1 Tsp
To Make Toffee Sauce
Brown Sugar - 1 Cup
Unsalted Butter - 1/2 Cup
Fresh Cream - 3/4 Cup
Method
1. Remove the seeds and chop the dates. Soak them in hot water for 15 mins.
2. Mash the softened dates and keep it aside.
3. Whisk and cream the brown sugar and butter in a large bowl.
4. Add egg, vanilla essence to this mixture and whisk everything again.
5. For the dry ingredients, sieve maida, salt, baking soda and baking powder into a bowl.
6. Add the dry ingredients to the wet ingredients bowl in small quantities.
7. Whisk the mixture every time the dry ingredients are added.
8. Add mashed up dates to the combined flour mixture. Whisk it all again.
9. Grease the ramekins with butter and dust them with some flour.
10. Pour the batter to fill only 3/4th of the ramekins.
11. Pre-heat the oven at 180 degrees centigrade for 15 mins. Place ramekins in the oven.
12. Bake the cakes for 30 mins at the same temperature.
13. Remove the date cakes from ramekins after they are completely cooled down.
14. For the toffee sauce, melt the brown sugar and unsalted butter first. Then add the fresh cream.
15. Once the sauce is thickened, turn off the stove.
16. Pour some sauce into a plate.
17. Place the evenly cut date cake on it and put some ice-cream on the top.
18. Sticky Toffee Pudding is ready to be served.
