How To make Mom's Nut and Date Cake
4 c Sugar
1 1/2 c Butter
1 qt Pecan halves
1 qt Dates, chopped
3 c Flour
Eggs, as needed (5-7) 2 T Vanilla extract
Prepare a large tube pan; line the bottom with brown paper and grease the pan and lining. Preheat oven to 275 degrees F. Cut butter and sugar together until it resembles cornmeal. Cover the pecans and dates with the flour (in large bowl); rub together so all pieces are well-floured. Dump sugar and butter on top; mix. Break in whole eggs (fewest possible) until you have the a wet mass, but not a batter. Add vanilla extract, and pour into prepared cake pan. Bake until done, 1 - 1 1/2 hours.

A real old fashioned family favourite, cheekyrichos Date Loaf in a Nut Tin. Best eaten warm with cold butter spread onto it. Nostalgia in a roll. We hope you give it a try.
INGREDIENTS:
150 grams water
120 grams chopped pitted dates
1/2 teaspoon bicarb soda
75 grams brown sugar
160 grams self raising flour
1 egg
40 grams nuts
1 teaspoon cinnamon
30 mm piece of vanilla bean
50 grams butter
METHOD:
Boil water, brown sugar, butter & chopped vanilla bean until sugar is dissolved, add dates and boil abut 5 minutes until syrupy & pulpy. Remove from heat. Grease Nut Loaf Tin well and set aside. To the date mixture add bicarb soda, flour,cinnamon & nuts mix until combined and pour into the prepared tin. Place the lid on and bake 45 minutes at 170 degrees celsius. Allow to cool slightly before removing ends of tin and turning out onto a wire rack. Slice while still warm and serve with cold butter.

There are so many recipes for Date cake/ date and walnut cake.This is an easy to make Date cake .This cake is rich in natural fibers and natural sugar as dates are the superheroes in this cake:)

Method
Heat oven to 180C/160C fan/gas 4.
Cream the butter and sugar until light and fluffy, then slowly add the eggs ,coffee powder,and vanilla extract.
Sift in the flour, baking powder,into the batter.
Pour into the tin and bake for about 60 mins until a skewer comes out clean. Cool in the tin for 5 mins, then remove to a wire rack.
Now our Date cake / Date walnut cake is ready.

Date Nut Cake
This recipe came via a community cookbook that was gifted to me from a church in the Little Switzerland of Ohio, otherwise known as Sugarcreek, Ohio. I'm not sure when the cookbook was published - perhaps in the 1970's or 1980's - but this seemed like a good, old-fashioned recipe, so I thought I'd try it. It was a wonderful cake!
1/2 lb. chopped pitted dates
1 tsp. baking soda
1/2 cup shortening (I used butter)
1 egg
1 cup of chopped nuts (I used walnuts)
1 cup of boiling water
1 cup sugar
1/2 tsp. salt
1 2/3 cup flour
1 tsp. vanilla
Preheat oven to 325 degrees.
Put chopped dates in a small bowl and sprinkle baking soda over dates. Cover with 1 cup boiling water and allow to cool to room temperature.
Cream shortening and sugar. Add egg and salt and beat well.
Add the date mixture (including liquid) alternately with the flour to the creamed mixture, scraping the bowl as needed. Add nuts and vanilla and stir in until combined.
Bake in a greased and floured 8x12 pan (I used an 8x8 pan) for 50 minutes at 325 degrees, or until cake tests done. Remove cake from oven and allow to cool completely on wire rack. Once cake is cooled, spread topping on cake.
Topping:
1/2 lb. chopped pitted dates
2 TBSP corn starch
1 cup sugar (I would cut this down to 1/2 cup unless you want a very sweet topping)
1 cup water
Combine all ingredients in sauce pan and slowly bring to a boil stirring constantly until thickened. Remove from heat and allow to cool completely before putting on cake.

How to Make Date Walnut Loaf Cake
A lovely moist cake packed with sweet dates and crunchy chopped walnuts.
INGREDIENTS
1 egg
3/4 cup sugar
1/2 tsp vanilla
1/2 cup oil
1/2 cup milk
1 1/2 cup plain flour
1/2 tbsp cinnamon
2 tsp baking powder
1/4 tsp salt
1 tbsp instant coffee
1 cup chopped dates
1/2 cup chopped walnuts
Bake for 45-55 minutes at 350° F.

Date Nut Cake Recipe with Michael's Home Cooking
This is my Mother's recipe for Date Nut Cake. If you love dates, you are in for a treat with this cake!
Ingredients:
1 cup dried dates
1 teaspoon baking soda
1 cup of boiling hot water
Allow the dates & water to come to room temperature
1 egg
3 Tablespoons soft butter
3 Tablespoons vegetable oil
1 cup sugar
the watery dates with water
1 cup chopped walnuts (optional)
1 and 1/2 cups all purpose flour
Bake @ 350F for 30 minutes
Frosting:
8 ounces cream cheese
4 Tablespoons butter
1 and 1/4 cups confectioners sugar
1 teaspoon vanilla extract (optional)

It’s celebration time all around the world. Wishing you all Merry Christmas. On this occasion, showing out three cake recipes, one by me, and the other two by my mother and mother-in-law. My mother-in-law prepares in a pressure cooker in a different way, so thought of sharing this method. My mother made it in the much traditional way which is not easy for the new generation, but it could also be done over the gas stove. Just showing how cakes used to be made earlier in the traditional oven. Here my mother has used Pressure cooker to get a thick vessel for the cake not to get burnt. You can use any other thick vessel too.

MY DATES CAKE ( No Eggs, No sugar, No Oven, No Beater) :
1. Dates - 15 - 25 ( As per your sweetness )
2. Milk - 1 cup for boiling dates + 1/2 cup while blending
3. Wheat flour - 1/2 cup
4. Maida - 1/2 cup
5. Baking powder - 1 tsp
6. Baking soda - 1/2 tsp
7. Salt - a pinch
8. Cinnamon powder - 1 tsp
9. Cardamom powder - 1/2 tsp
10. Oil - 1/2 cup
11. Raisins - a handful dusted with some flour

MOTHER-in-law’s CARAMALISED SUGAR CAKE
Measurment for 1 cake
My cup measurement is 200 ml cup
All purpose flour - 200ml
Oil/Butter/Ghee - 200ml
Sugar - 200ml
Eggs - 5
Vanilla essence - 1 tsp
Baking soda - a pinch or two
Cashews & raisins roasted in ghee - a handful
Caramalised sugar syrup -
Sugar crystals - 2 - 3 spoons
Water - 5 - 6 tbsp

Dates - 1 - 1.5 cup deseeded
Baking soda - 1 tsp
Hot boiling water - 1.25 cup
Oil - 1/2 cup
Sugar - 1 cup
Egg - 1
Vanilla essence - 1 tsp
All purpose flour - 1.5 cup
Baking powder - 1 tsp
Salt - 1/2 tsp
