Slow Cooker Beef Stew ???? with Mushrooms ???? and Cauliflower | Low-Carb, Keto
Few things are as soul-satisfying as a steaming hot bowl of beef stew with mushrooms. I cooked it in a slow cooker, but you can use a stovetop or oven. This recipe is easy to make but takes time, so it’s perfect for a weekend dinner or meal prep. You can pack leftovers for a work lunch during the week.
Low-carb cauliflower thickens this stew and gives it creaminess. A sprinkle of minced parsley makes a bright and fresh accent to this comforting winter favorite.
This hearty beef stew with cauliflower and mushrooms is perfect for a Keto (low-carb) meal prep. Carb-free recipe for the meal plan. Amazing dinner recipe and don’t spike blood sugar (diabetic-friendly)!

Slow Cooker Pot Roast | Pulled Meat with Mushrooms & Potatoes | Kravings
This version of my Pot Roast is cooked in the slow cooker as opposed to the pressure cooker. The process is almost similar, it's served in a pulled Beef fashion instead of slices. This method INMHO makes it more pot luck friendly. I also added mushrooms & potatoes and served the gravy or jus on the side as an add on.
Here are the ingredients and steps to make this recipe!
4 lb chunk of Beef tenderloin
Juice 1/2 Lemon
2 tbsps fresh Ginger and Garlic paste
1 tsp Cumin powder
1 tsp Chilli powder
½ tsp turmeric
30 cloves
3 - 2 inch sticks of Cinnamon
3 Star Anise
10 black Peppercorns
6 Cardamoms
6 Kashmiri chillies
2 cups sliced Onions
Salt
2 – 3 Potatoes sliced
1 cup of Beef or Vegetable stock
1 cup Mushrooms
Prepare the tenderloin by removing the extra fat and silver skin
Cut it into 4 smaller chunks
Add the lemon juice and ginger and garlic paste
Add the powdered spices and salt and mix well
Marinate overnight
Heat some oil and saute the whole spices and the red chillies
Add the onions and cook till caramelized
Add some salt so the onions get brown faster
Remove from the pan and add the beef and sear
Remove the beef add more oil to the saute pan and fry the potato slices
Add the beef to a crock pot or slow cooker and cover with the onions
Add the stock and cook for 8 hrs
Add the mushrooms and cook for another 1/2 hr or toss in sautéed mushrooms

Shopping List:
3 - 4 lb chuck roast
2 tbs avocado oil
1 whole onion (Quartered or halved)
4 Carrots (chopped)
4 celery stalks (chopped)
1 lb red potatoes chopped
1lb yukon gold
1 cup red wine (dry)
3 cups beef broth
2-3 tbsp tomato paste
1-2 tbs beef base better than bouillon
2 sprigs rosemary
1 bunch of thyme
2 bay leaves
1 tbsp soy sauce
1 tbsp worcestershire sauce
whole garlic bulb
Preheat oven to 325.
Generously season your chuck roast with salt, pepper, onion powder, and garlic powder. Allow it to come up to room temperature. Heat Oil in a large pot or dutch oven. Get the pot very hot to sear your beef. Sear on both sides for about 3-5 minutes per side or until nice crust is formed. Remove the roast and add your onions and garlic and then your wine. Reduce the wine by half and add your tomato paste and beef base. Now place the chuck roast on top of the onions. Add 3 cups beef stock and top with fresh herbs and cover. Place in oven for 2 hours and then add in your vegetables for the last hour. After about 3 hours total, your roast should shred easily with a fork. (During the final 30 minutes, you can remove the lid and cook - this helps reduce the gravy and brown the roast a bit) Serve with rice, potatoes, or cauliflower mash. Garnish with chopped parsley.
Salt, pepper, garlic, onion powder
Slurry - 2-3 tbsp corn starch + 1/4 cup water (2:1 ratio - you can adjust based on desired gravy thickness)
