Simple, yet delicious Georgian Suluguni cheese stuffed mushrooms are perfect appetizers!
Ingredients:
- 500 grams of mushrooms (it became 300 grams after removing the stems)
- 1 tablespoon of vegetable oil
- Salt and black pepper to taste
- ¼ teaspoon of khmeli suneli
- 50 grams of butter
- 125 grams of Suluguni cheese
- 1 tablespoon of chopped coriander
Note: Do not wash the mushrooms. Clean them with a wet towel or remove the skin.

BAKED STUFFED MUSHROOMS
RECIPE
INGREDIENTS:
* mushrooms - 200 gm
* chopped onions - 2
* chopped jalapeños - 8
* processed cheese - 100 gm
* chopped coriander leaves - 1/2 tsp
* mixed herbs - 1/2 tsp
* salt - 1/4 tsp
* crushed black pepper - 1 tsp
* oil - 1 tbsp
* butter - 5 gm
PROCEDURE :
* Remove all the mushroom stems.
* In a pan , add oil & butter and onions. Saute them till they turn translucent.
* Add crushed pepper & salt. Remove it from the flame &let it cool.
* Now add jalapeños, herbs.processed cheese &chopped coriander leaves.
* Keep the mushroom upside down & start filling them.
* Brush the pan with butter.sprinkle some crushed peppers.
* Now arrange the mushrooms into the pan,
* Bake them at 220 ℃ for 18 - 20 minutes.
* serve hot.

MEAT in DOUGH. HINKALI.
The filling for khinkali is made from beef / veal or pork (a common option is beef with pork), less often - mutton / lamb. The filling can be chopped (classic) or minced. Many different spices and herbs are necessarily added to it. There are also khinkali with cheese (usually suluguni), which are a substitute for meat dishes for vegetarians, and also add variety to the Georgian cuisine rich in meat dishes. Khinkali with mushrooms is a purely vegetarian dish. In khinkalny ones with a large assortment, mushrooms with cheese, turkey and even crayfish meat can act as filling [2].
An important element in the creation of khinkali is the work on the form. Traditionally, Georgian housewives sculpt them in such a way that a small tail of dough turns out at the top. It is believed that khinkali at the base (when approaching the tail) should have at least 18 folds. So easy to hold; at the same time, the tail cools down even faster. Usually, an uncooked tail is thrown away (it is also convenient to count by the tails how many khinkali ate [3]). Blind khinkali are boiled in boiling water (the most common option) or fried. Some establishments offer both boiled and fried options for each type of khinkali with different fillings.
A characteristic feature of the dish (first of all, with meat stuffing and, in particular, boiled versions) is the presence of a large amount of “juice” (actually broth) inside each “khinkalin”. As a result, the process of eating becomes more complicated, and it is recommended to eat with your hands: using a fork and a knife will not allow you to keep the juice inside the khinkalin.
When serving, khinkali are usually laid out on one large common dish, seasoned with butter and (at the client's request) large freshly ground black pepper. Often, a sour milk-based sauce with the addition of crushed / crushed garlic (about the same as for dolma) is served with the dish. Various red sauces are very rarely offered. In some establishments, it is believed that sauce is not needed for khinkali at all, and it is served only at the request of the visitor.
