How To make Cranberry Orange Pound Cake, Butter Rum Sauce
CAKE:
2 3/4 c Sugar
1 1/2 c Butter; room temp
1 ts Vanilla extract
1 ts Grated orange rind
6 Eggs
3 c Flour
1 ts Baking powder
1/2 ts Salt
1 pk (8 ozs) sour cream
1 1/2 c Fresh or frozen cranberries;
- chopped (do not thaw)
SAUCE:
1 c Sugar
1 tb Flour
1/2 c Half-and-half
1/2 c Butter, melted
4 ts Light rum, or
- 1/4 tsp rum extract 1. For cake, heat oven to 350 degrees. Generously grease and lightly flour
12-cup fluted tube pan; set aside.
2. Beat sugar and butter in large bowl of electric mixer until light and
fluffy. Add vanilla and orange rind. Add eggs, one at a time, beating well after each addition. 3. Combine flour, baking powder and salt in medium bowl. Add flour mixture
to egg batter alternately with sour cream, beating well after each addition. Gently stir in cranberries; pour batter into prepared pan. 4. Bake until toothpick inserted into center comes out clean, 65 to 75
minutes. Cool in pan 15 minutes; invert cake onto serving plate and remove from pan. 5. While cake is cooling, make the sauce. Combine sugar and flour in small
saucepan. Stir in half-and-half and butter. Cook over medium heat until thickened and bubbly, stirring constantly. Remove from heat; stir in rum. Serve warm sauce over cake. From Helen Aiello, Milwaukee. Chicago Tribune 6/9/94. -----

1 cup Packed Brown sugar
Streusel Topping:
1 cup Brown sugar

Zest of 1 orange
1/4 tsp kosher salt

Glaze:
1 cup powdered sugar

Ingredients
-4 eggs
-2 cups flour
-1 cup of sugar
-1 1/2 tablespoon of baking powder
-2 tablespoons of vanilla extract
-1 cup of milk
-1 cup of oil
-1 cup of dried cranberries
-1 cup of walnuts chopped
-2 tablespoons of orange zest
-1/3 cup of orange juice

Glaze
-2 cups of powder sugar
-4 1/2 tablespoons of orange juice
:
-preheat your oven at 350° then chop up the walnuts roughly zest the orange and juice it
-add the eggs, sugar, baking powder, vanilla extract, oil and milk into your mixture and mix it until smooth. Then add the flour, orange juice and the orange zest and mix until everything is mixed together. Then lastly add the dried cranberries and the walnuts and fold it into the cake batter.
-Grease your Bundt pan pretty well so your cake doesn’t stick then put in the batter and bake it at 350° for 35 to 40minutes depending on your oven. When the timer is done put a toothpick right in the middle of it if it comes out clean then it’s done and let it cool down for 10 minutes and the flip.

This is the cake I usually bake for my family and friends for the Holidays and everyone just loves it. The orange zest in this is seasonal. You can only find it around this time of year and so this is the perfect time to indulge in this deliciousness.
Ingredients:
5 eggs
½ cup dried cranberries (craisins)
½ cup spiced rum
2 tsp vanilla extract
2 ¾ cup cake flour
1.5 tsp salt
¼ cup orange juice
½ cup orange peel
Baking soda ¼ tsp
1.5 tsp baking powder
¼ cup shortening (replace with 1/4 cup butter but definitely use shortening for a better texture of you can)
1 cup unsalted butter
1.5 cups sugar
