HOW TO MAKE SOFT NO KNEAD FRUIT BREAD
We can make this Sweet Bread or no knead Fruit Yeast Bread in five simple steps
1.Prepare the dough
2.First Proofing
Wrap the bowl with a plastic film and let the dough stand rise in a warm environment for 1 hour or until it gets almost doubled in size.
3.Shape the dough
4.Final rising
Let the dough sit and rise in warm environment for 90 minutes.
5.Bake the Fruit Bread
Bake the Fruit bread at 350 F preheated oven for 34-35 minutes.Reduce the baking temperature to 325 F and bake for another 4-5 minutes
The top of the fruit bread or fruit loaf will start browning at around 25 minutes of baking.It doesn’t mean our dry fruit bread is done.
At this point if we take it out, the center of the fruit yeast bread will have a doughy texture and it will smell very “yeasty”
So wait for until the fruit bread is baked properly.
If you find the top getting too dark, you can tent the top with an aluminum foil at around 25 minutes and then continue baking.

No-Knead Cranberry Walnut Bread with Honey
Ingredients
* 3 cups all purpose flour, plus 3 tablespoons
* 1/2 teaspoon instant yeast
* 2 teaspoons sea salt
* 1/2 cup chopped walnuts
* 1 cup dried cranberries
* 1 1/2 cups water at room temperature
* 2 tablespoons liquid honey, plus more for brushing on after baking or other vegan honey substitute
Instructions
* Start with a large bowl and a wooden spoon, and add your flour to the bowl. Measure the yeast and add it to one side of the bowl. Measure the salt and add it to the other side.
* Using a wooden spoon, stir the yeast into the flour on its side of the bowl first and then stir the salt into the flour on its side of the bowl. This will prevent the salt mixing directly with the yeast. Give the whole mixture a few good stirs to make sure everything is combined.
* Add the cranberries and walnuts to the flour mixture and toss well to coat, and to make sure they're distributed evenly throughout.
* Measure the water. Make sure the water is at room temperature; water that is too warm or too cold can kill the yeast and prevent the bread from rising at all. Add the honey to the water and stir with a fork to combine.
* Pour the water in and stir with a wooden spoon. The dough will be rough and a bit sticky, but that's normal.
* Stir until all the flour is combined. This is not normal bread dough (there's no kneading involved in this recipe), so you don't need to be too concerned about the appearance of the dough at this point. Just make sure the ingredients are combined well.
* Cover the bowl with plastic wrap. It's a good idea to ensure there's adequate space left in the bowl for the dough to at least double in size. Place the bowl in a warm, draft-free place and let it rise for 12-18 hours.
* After the dough has risen for 12-18 hours, preheat your oven to 425 degrees Fahrenheit (if you're using convection, 410 degrees. If your oven runs hot, 400 degrees). Place your Dutch oven with the lid on in the cold oven and let it heat up with the oven. If your dutch oven is black or dark-coloured on the inside, set your oven to 400 degrees Fahrenheit instead of 425. I recommend a 6 or 7-quart dutch oven for this recipe.

No-Knead Cranberry-Walnut Bread! Perfect 18-Hour Loaf!
No-Knead Cranberry-Walnut Bread
You will need:
3 cups of all purpose or bread flour
1/2 teaspoon of active dry yeast
1 teaspoon of salt
1 teaspoon of sugar
2 teaspoons of oil
1 1/2 cup of cold water
1 cup of chopped walnuts
1 cup of dry cranberries
Combine all dry ingredients.
Add walnuts and dry cranberries. Mix well.
Add oil to water and add to dry ingredients.
Using handle of long kitchen spoon mix all ingredients.
Do not knead the dough.
Cover mixing bowl and let proof for 18 hours.
Better to make your dough in the evening and bake your bread in the morning.
After the dough has been proofing for 18 hours take it out on a flour surface, shape into a loaf and put it either in a clay pot or cast iron pot.
You do not need to preheat the oven when baking in a clay pot.
Put your bread into a cold oven, set the temperature for 475 degrees Fahrenheit and set the cooking time for 45 min. Keep your clay pot covered. In 45 min, remove lid of your clay pot and let bake for another 5 min for bread to form the crust on the top.
Take it out . Let cool for couple minutes.
You can use cast iron pot to bake your bread. For cast iron pots: baking time is 30 min in preheated oven (covered) and 15 min (uncovered).

In this video I'll bake two loaves of cranberry walnut sourdough bread to find out which method works best when adding inclusions. I'll make one batch by adding the inclusions during the initial bulk fermentation, during the second set of stretch and folds. Then, I'll add the cranberries and walnuts to the second loaf during the final shaping. I want to see if adding the inclusions during bulk fermentation affects the gluten formation and structure of the crumb.
I did not include the recipe for the Cranberry Walnut bread in this video however, I will post the full recipe tutorial in a future video. I will include a link to a recipe and tutorial on how to make sourdough bread for beginners below:

Ingredients:
All purpose flour-2 cups ( 260 g)
Baking powder-1&1/2 teaspoon
Baking soda-1/4 teaspoon
salt-1/4 teaspoon
melted butter / vegetable oil-1/2 cup (120 ml)
sugar-1 cup (200g)
egg-1 large ( at room temperature)
vanilla essence- 1teaspoon
orange zest-1 teaspoon
buttermilk-2/3 cup ( 160 ml)
cranberries-120 g ( I used dried cranberries, you can use fresh cranberries if available)
Buttermilk substitute:
milk-2/3 cups + 1&1/2 teaspoon lemon juice or white vinegar.
mix and let it sit for 15 minutes.
Baking:
pan size I used: 8X2 inch loaf pan
time:
Preheat oven( 170c for 10 minutes)
Bake at 170c for 55-65 minutes.
