Complimenting the Christmas season perfectly this Cranberry Pumpkin Seeds Bread carries the Red, Green & White Colors and you can enjoy with Cream Cheese or Olive oil and Balsamic Vinegar mixture too.

Ingredients :
2 cup plain flour (maida)
(2 cup wheat flour/1 cup plain flour + 1 cup wheat flour is optional)
2 tsp sugar
1 tsp instant/dry yeast (1/2 tsp fresh yeast optional)
1 tsp salt
1.5 tbs oil + some oil to brush
250 ml water
Some finely chopped dried US Cranberries
Some pumpkin seeds
Method :-
Take mixing bowl, add 2 cup plain flour (maida)
(2 cup wheat flour/1 cup plain flour + 1 cup wheat flour is optional)
Add 2 tsp sugar
Add 1 tsp instant/dry yeast (1/2 tsp fresh yeast is optional)
Add 1 tsp salt (side of the flour)
Add 1.5 tbs oil (any cooking oil)
Add 250 ml water (with room temperature), kneed it well and make sticky/smooth dough.
Take few drops of oil in your palm, apply it on dough, cover the bowl and rest it for an hour to raise and get good aeration in it.
Further sprinkle some flour on kitchen platform/work surface and take dough on it.
Apply some oil on palms and flatten dough with the help of hands.
Brush some oil/butter on it
Add some finely chopped dried US Cranberries
Add some pumpkin seeds and tap on it gently to stick
Fold this dough from side and make a thick roll
Further to cut it into 3 equal shapes, brush some oil on knife and make 2 vertical cuts on it and then cut it further
(Do not cut till the end of the roll)
Then pinch the ends together and cross the left strand over the middle strand, then cross the right strand over what's now the middle strand.
Repeat until you reach the end of the dough, then twist the ends together and pinch, fold the top inside.
Transfer dough into baking loaf (greased with oil and place a parchment paper in it)
Brush some oil on it
Add some chopped US Cranberries and pumpkin seeds on top
Keep the loaf in 10 mins preheated oven at 180⁰ and bake it for 20-22 mins.
(To bake it on stove - preheat big pan for 10 mins, place a strainer in it, keep baking loaf on it, cover the lead with napkin and bake for 30 mins).
Remove the loaf from oven, brush some oil/butter on bread
Rest it for 10 mins
And then your Super Yummy Cranberry & Pumpkin Seeds Bread ready!!!

Christmas Cranberry Bread – Like Grandma Used to Make
This is another recipe from my wife’s Grandma’s recipe box, still plenty more recipes to go.
Honestly I only like jellied cranberry sauce. I don’t think I purposely, or knowingly, ate anything else with cranberries.
But I did after this recipe. It was ok, even though there were 4 times as much cranberries than chopped nuts, I could taste the nuts more.
Oh yea, I did add the nuts, I used chopped walnuts, but I forgot to do it before I put the mixture into the loaf pan. So I ended up mixing them in the pan. Didn’t catch that on video.
Maybe if I used pecans, it might have tasted better, but it was ok, it was way better than some other ones I’ve done.

Ingredients:
2 cups White self-rising flour
4 Tbsp light butter spread (I use Brummel & Brown Spread)
2 large Eggs
1⁄2 cup Fresh orange juice
1⁄2 cup Great Value Light vanilla flavor Greek nonfat yogurt
3⁄4 cup Truvia Sweet complete brown calorie free sweetener
1 tsp Orange zest
1 tsp Vanilla extract
1 cup Fresh cranberries, chopped
1⁄2 cup Golden seedless raisins
Mix together flour and butter spread. Mix in eggs, yogurt, brown sugar, orange juice, orange zest, vanilla, until well incorporated. Fold in cranberries and raisins. Pour into prepared bread pan and bake at 350 for 65-70 minutes.
