Cranberry jalapeño corn muffins
These were subtlety sweet and the cranberries popped with tang
Kernels from 2 corns
1 cup veggie broth
1 4 oz cup unsweetened applesauce
5 deglet dates, can add more if want sweeter
2 tbs coconut sugar
1/2 tsp salt
1 cup unsweetened cranberries (can sub for raspberries)
3-4 pickled jalapeños chopped
Handful chopped pistachios
2 cups cornmeal
1 cup oats ground into flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground sage
1 tsp ground thyme
Mix cranberries, jalapeños, and kernels from 1 corn with flour and rest of dry ingredients. Blend veggie broth, kernels from 1 corn, applesauce, dates. Add to dry and mix.
Place batter in cupcake liners and bake around 25-30 minutes at 350F.

Spiced Orange Cranberry Muffin Recipe

These Christmas Morning Muffins are perfect for - well - Christmas morning. But the combination of spice, orange and cranberry make them a perfect muffin recipe for almost anytime.
Ingredients:
1 cup (250 mL) cranberries
¼ cup (60 mL) sugar
1½ cup (375 mL) all purpose flour
¼ cup (60 mL) sugar
2 tsp (10 mL) baking powder
1 tsp (5 mL) salt
½ tsp (2 mL) cinnamon
¼ tsp (1 mL) nutmeg
1 egg
½ tsp (2 mL) orange zest
¾ cup (175 mL) orange juice
⅓ cup (75 mL) butter melted
¼ cup (60 mL) pecan pieces
Method:
Pre-heat oven to 375ºF.
Chop up the cranberries, then sprinkle with sugar and set aside.
Stir together the dry ingredients, and make a well in the centre.
In another bowl, whisk together egg, zest, juice, and butter.
Add wet to dry and mix just until moist.
Fold in the cranberries and nuts.
Bake for 15 - 20 minutes. Makes 6 jumbo muffins.

Cornbread Cranberry Stuffing written recipe:
Ingredients
cornbread (recipe below)
4 tablespoons butter
1 small onion, diced (about 1 cup)
4 celery stalks, diced (about 1 cup)
1/2 teaspoon salt
1 teaspoon fresh thyme
1 cup chicken broth
2 eggs, whisked
1/2 cup dried cranberries
cornbread
1 cup corn meal
1 cup flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1/3 cup vegetable oil
1 large egg, whisked
Preparation
1. Preheat oven to 350 F.
2. Break apart cornbread into chunks and place onto a baking sheet. Toast in the oven for 10 minutes until dried out.
3. In a sauté pan heat the butter and then sauté the onions, celery, salt and thyme for 8 minutes until tender.
4. Whisk the chicken broth and egg in a bowl until combined.
5. Place the toasted cornbread pieces, the onion celery mixture and egg mixture in a large bowl with the cranberries and toss to combine.
6. Place stuffing in a buttered 7 x 11 baking dish and bake for 45 minutes.
Cornbread
1. Preheat oven to 400 F.
2. Combine the first 5 ingredients in a bowl.
3. Whisk the milk, oil, and egg in another bowl.
4. Add the wet ingredients to the dry ingredients and stir until blended.
5. Pour batter into a greased 8 x 8 baking dish and bake for 20-25 minutes.

I give these muffins a 6/10 they were a bit dry I wouldn't really make them again unless I added all the butter, which I believe that's mainly the reason its so dry, or maybe if you took out the cornmeal but overall the cranberries added that extra flavor but personally this recipe isn't my style.

I rehydrate the cranberries in Orange Juice, about 1 oz of Tequila and 2 T of ginger paste (optional).
Optional Glaze:
1 1/4 powdered sugar
2T of Orange and or Cranberry Juice
1T Vanilla Extract (optional)
