2 c Cornmeal,sifted* 3/4 ts Baking soda 1/2 ts Salt 1 Egg 1 1/2 c Buttermilk 1 1/2 tb Lard or vegetable shortening 1 1/2 tb Butter 1. Preheat oven to 400'F. 2. Grease 2 6-cup muffin tins with vegetable shortening or lard. Place in oven to heat. 3. Sift cornmeal, soda, and salt into a mixing bowl. 4. Beat egg with buttermilk. Heat shortening with butter until melted; add to egg and buttermilk and blend. Add to dry ingredients all at once and stir just enough to give the mixture a rough appearance. Add additional buttermilk if mixture seems too dry. 5. Pour into hot muffin pans and bake about 20 minutes, or until lightly browned. Serve hot with plentyof soft butter and any homemade jelly or jam.

Ingredients corn pudding: 3 T butter 4 T flour 1 C milk 1/2 t salt (or to taste) 1/8 t pepper (or to taste) 1 small onion, chopped (Substitute green onion if desired) 1 can whole kernel corn (Or about two cups fresh corn scraped off cob) 2 eggs, beaten 1 T sugar 1/2 C ritz crackers green onion tops or fresh herb of your choosing for top of pudding. I used fresh cilantro leaves as that is what I had!
Melt 1 stick of butter and poor over cracker crumbs, mix well. Pat into bottom of glass pie plate or casserole dish. Set aside. Melt remaining 3 T butter in heavy bottom skillet. Over low heat; add flour and stir till smooth. Slowly blend in your milk; cook a until thickened, stirring continuously (cool slightly). Add salt and pepper: add your onion, corn, and beaten eggs (stir hard so you don't cook the eggs). Poor this mixture over your cracker crust. Top with remaining cracker that you have crumpled and sprinkle with green onion tops or herbs. Bake at 400° 25-30 mins.
