How To make Crab and Cheese Strata
12 sl Firm white bread
1/2 lb Crabmeat, flaked
1 Tiny onion, chopped fine
2 c Swiss or gruyere or mixed
-and parmesan, grated 4 Eggs
1 ts Dijion mustard
6 tb Butter
1 Rib celery, chopped fine
1/3 c Mayonnaise
2 c Milk
1/4 ts Pepper
Trim 6 slices of bread to fit bottom of greased 12x8 baking dish. Butter one side of each slice with 1/2 t butter and place bread in bottom of dish, buttered side up. Mix crab, celery, onion and mayo. Spread over bread slices. Scatter cheese over. Trim other 6 slices of bread and butter them, as above. Place with buttered side down. Mix eggs, milk, mustard and pepper together and pour evenly over casserole. Cover with plastic wrap and refrigerate at least 2 hr. (overnight). Bake at 350 for 35-40 min. or until puffed and light brown. Let cool 10 min before slicing and serving. Serves 6.

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Ritz Crackers - 1 sleeve
softened butter - 1/2 stick
Imitation crabmeat. 1/2 package
Clean, peel shrimp and butterfly:
Mix crab, crackers and butter. Divide shrimp between two plates and cover with cracker mixture.
Bake at 375 for 15 minutes
Potato/onion strata
3-4 small potatoes sliced in 1/4 in rounds
1/2 large onion slice 1/4 in
1/2 stick butter
Layer potatoes and onions in casserole dish ending with potatoes and butter.
Microwave for 15 minutes or until potatoes are done.
Can add bacon or cheese if desired.

Hey Chefs! This savory bread pudding is called Strata. It's great for breakfast and family brunch. You can add any meat to it. This dish can also sit overnight and baken the next day.
