Amish Cottage Cheese Pie
Makes 1 pie
2 beaten eggs
2 T. all-purpose (AP) flour
1 cup sugar
2 cups cottage cheese
1/2 t. lemon zest
2 T. lemon juice
1/4 cup heavy whipping cream
pinch salt
unbaked deep-dish pie shell
Sprinkle with nutmeg if desired.
Bake 350F for 40 minutes. Cool completely. Store in refrigerator.

Cottage cheese pie is a sweet dessert which is easy to make with just few ingredients.
Ingredients
Filling
250g cottage cheese
1/4 cup sugar
2 eggs
1/2 teaspoon Vanilla essence
Crust
11/4 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup sugar
100g cold butter/margarine
Instructions
1. Preheat oven to 180°c.
2.Put all the filling ingredients in a bowl and mix until well combined with a hand mixer or stick blender and set aside.
3. In a separate bowl add all the dry ingredients and grate the cold butter.
4. Rub in the cold butter into the flour until mixture resembles breadcrumbs.
5. Grease baking tin and add 3/4 of the flour mixture to the tin, press the flour down with a spoon or water glass
6. Pour the filling mixture and cover the top with the remaining flour mixture.
7. Bake for 30minutes and leave to cool completely for 1 hour before removing from the tin
8. Serve and enjoy.

1 Cup oat flour
1 Tablespoon baking powder
1 Tablespoon oil

0:10 Preheat the oven to 350 degrees F.
0:14 In a mixing bowl attached to a hand beater, add the cottage cheese, sugar, and salt. Cream until pale and light, roughly 5 to 7 minutes.
0:25 Add the cream, lemon juice and zest, eggs, vanilla extract, and flour. Continue creaming until evenly incorporated.
0:50 Carefully transfer the cheese filling into the pie crust. Then, sprinkle nutmeg on top.
1:00 Bake the pie for roughly 45 minutes or until a knife comes out moist but clean. You may need to cover the crust with foil in case it turns too dark
