Quick and easy cottage cheese recipe.
Ingredients:
2 eggs
3 tablespoons sugar
Vanilla sugar - 7.5 grams (1 sachet)
Salt
Cottage cheese - 350 grams
Flour - 125 grams(5-6 tablespoons)
Boil for 5 - 7 minutes
Add honey or sour cream (optional)

INGREDIENTS
4 large eggs
500 gr of cottage cheese
100 gr of cornstarch
100 gr of sugar
to flavor it: zest of a lemon or vanilla extract
METHOD
Separate the whites from the egg yolks. Beat the egg whites very firm with a pinch of salt. Beat the egg yolks with the sugar until they whiten and double in size. Add the cottage cheese and mix. Add cornstarch with lemon zest or vanilla extract. Incorporate the whites into snow gently without breaking them little by little. This is the secret of the cake! Even if the whites are not totally incorporate it does not matter! The dough should not be smooth. Pour the mixture into the mold. Bake and cook for about 30 minutes.
Prepare fruit and hazelnut dressing.
To prepare the fruit dressing, cook 150 g of berries with 50 g of vanilla sugar, let cool to room temperature and pour over the cake
Prepare hazelnut sauce with 150 g chocolate cream, 50 ml milk and 50 g hazelnut. Pour over the cake and enjoy the full flavor of the chocolate, on perfectly soft cheesecakes.

Ingredients-
????6 digestive biscuits
????3 tbsp melted butter
????½ cup cream cheese, softened
????2 tbsp heavy cream
????1/2 tbsp corn flour
????1/2 tsp vanilla extract
????1/4 cup condensed milk
????3 strawberries, puree
????2 extra strawberries, chopped
Instructions:
1. In a blender, add biscuits and process them until fully crushed. Now add melted butter and blend again.
2. Transfer the biscuit crumbs into a 4” inch springform pan and press down evenly. Set it in the fridge for 10-15 minutes.
3. In another bowl, add cream cheese, heavy cream, condensed milk, cornflour and vanilla extract.
4. Mix until the batter is fully combined.
5. Now transfer this on top of the biscuit base. Seal the bottom of the springform pan with two layers of aluminum foil so nothing leaks out.
6. Place the cheesecake tin in a bigger baking dish with hot water creating a water bath.
7. Bake in a preheated oven 160 celsius for about 40 mins.
8. Once baked fully run a knife around the edges while the cheesecake is still warm.
9. Transfer the cheesecake into the fridge to cool for about 2-4 hours.
10. Top it up with strawberry puree and chunks.
11. Slice it and enjoy!

Cake with Cottage Cheese and Berries - a Midsummer Night's Dream
This cake brings back memories of summer. Sweet, creamy and fresh. You can substitute the redcurrants with most any other fruit or berry.
Ingredients:
1 cup fresh berries (subsitute with fruit like apples, cherries, plums) If using frozen, do not thaw before adding to the cake.
1 cup sugar
3 eggs
200 g cottage cheese
1/2 cup neutral oil like canola
1 cup milk
2 cups flour
2 tsp baking powder
180*C/350 F for 40-45 min. Middle to lower section in the oven.
1. Whisk the eggs and sugar until soft and fluffy. Add the milk and oil.
2. Gently mix in the flour + baking powder to the wet ingredients. Get lumps out but don't over stir.
3. Line a baking pan 22cm/9-10 inches, and pour batter in.
4. Spread the cottage cheese on top of the cake, and continue spreading fresh/frozen(not thawed) berries on top. Push them a little bit
into the batter.
5. Cook for 40-45 min. at 180C/350F.
6. Let cool, and enjoy while it's still luke warm (good cold too) with
whipped cream, vanilla yoghurt or ice-cream. Optionally sprinkle with powdered sugar.
