How To make Cornmeal Dumplings
1/2 cup cornmeal
1 tablespoon all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg yolk (see note)
2 tablespoons milk
(2 to 4)
2 teaspoons fat (melted butter or margarine :
olive or
vegetable oil, bacon drippings or chicken fat)
Into small mixing bowl, sift together the cornmeal, flour, baking powder and salt. In separate bowl, beat egg yolk with milk and fat. Stir into dry ingredients. Drop by serving spoonfuls onto simmering vegetables, stew, soup or stock. Cover tightly and cook 15 minutes over low heat. Serve hot.
Makes 2 or 3 dumplings, enough for 1 generous serving
It can be doubled (see note).
CHEESE CORNMEAL DUMPLINGS Fold into batter 1 ounce (about 1-1/2 tablespoons) finely diced hard cheese such as provolone, cheddar, Monterey jack, Swiss, Edam, Muenster, havarti, etc. Cook as directed.
Note: When doubling recipe, use 1 whole egg rather than 2 egg yolks.

How to Make Southern Mustard Greens with Cornmeal Dumplings #southerncooking #mustardgreens
1-2 ham hocks or any smoked meat
8 cups of water, enough to cover the meat
Salt to taste
Pepper to taste
Garlic powder to taste
1 whole onion
4 cloves of garlic
4-5 bunches of mustard greens
1 cup of cornmeal 1⁄2cup of flour
1 tablespoon of baking powder 1/2 tablespoon of salt2⁄3 cup of water
1 tablespoon of olive oil
1. In a large stock pot, add smoked meat or ham hocks and cover with water. Add olive oil, salt, pepper, and garlic powder. Cook on medium high heat until the meat is tender.
2. Once the meat is tender, add your cleaned greens to your pot. Add one whole onion and 4 cloves of garlic. Let them cook for 1 and 1/2 hours til tender.
3. To make the dumplings, in a small bowl, add corn meal, flour, baking powder, salt and whisk until combined. Add water and mix well. Add one tablespoon of olive oil.
4. Pinch off a small amount of cornmeal mixture and form into small discs.
5. Add cornmeal dumplings directly on top of the mustard greens. Gently push the dumplings down into the pot liquor to allow the dumplings to cook.
6. Cover for 20-25 mins or until the dumplings puff up.
7. Remove from the heat and serve immediately.
